Bibim Jaengban Makguksu: Summer Delight, Refreshing and Flavorful

With an abundance of lettuce from my in-laws’ house and various vegetables at home needing to be used, I decided to make ‘Jaengban Makguksu’ by preparing just the sauce and mixing it with everything! This dish, featuring vibrant vegetables, chewy buckwheat noodles, and tender chicken tenderloin, is not only visually appealing but also incredibly delicious. Enjoy this perfect summer delicacy easily at home.

Noodle & Vegetable Ingredients

  • Buckwheat noodles, 2 servings
  • Fresh lettuce, 8 leaves
  • Aromatic crown daisy (Ssukgat), 4 stalks
  • Crisp cucumber, 1/2
  • Sweet carrot, 1/2
  • Crunchy cabbage, 1 handful
  • Tender chicken tenderloin, 150g
  • Hard-boiled egg, 1 (for garnish)

Spicy and Sweet Sauce

  • Soy sauce (Gukganjang), 4 Tbsp
  • Red pepper flakes (Gochugaru), 4 Tbsp
  • Plum extract (Maesil-aek), 4 Tbsp
  • Minced onion, 2 Tbsp
  • Minced apple, 2 Tbsp
  • Vinegar, 2 Tbsp
  • Sesame oil (Deulgireum), 2 Tbsp
  • Minced garlic, 1 Tbsp
  • Sugar, 1 Tbsp
  • Oligosaccharide (corn syrup), 1 Tbsp
  • Sesame seeds, 1 Tbsp
  • Mustard paste (Yeon-gyeojja), 1/2 Tbsp

Boiling Chicken (Broth Ingredients)

  • Water, 500ml
  • Green onion, 1/4 stalk
  • Onion, 1/4
  • Whole peppercorns, 1/2 tsp
  • Bay leaves, 2
  • Rice wine (Cheongju), 2 Tbsp (for removing gaminess)

Seasoning for Boiled Chicken

  • Salt, 1/3 tsp
  • Sesame oil (Deulgireum), 1 tsp
  • Black pepper, to taste

Cooking Instructions

Step 1

First, let’s prepare the broth for boiling the chicken. Pour 500ml of water into a pot.

Add the cleaned green onion (1/4 stalk).

Add the roughly chopped onion (1/4).

Add 1/2 tsp of whole peppercorns, which helps remove any gaminess.

Include 2 bay leaves for an aromatic touch.

Finally, add 2 Tbsp of rice wine (Cheongju) for its deodorizing properties. Bring to a rolling boil over high heat. Once boiling, maintain high heat and proceed to the next step.

Once the broth is boiling, add the 150g of chicken tenderloin. Cook over high heat for about 10 minutes, ensuring the chicken cooks through until tender. While the chicken is cooking, we’ll prepare the sauce.

Remove the cooked chicken tenderloin from the broth and shred or cut it into bite-sized pieces. Season the shredded chicken with 1/3 tsp of salt.

Sprinkle with a pinch of black pepper. Gently mix everything with your hands to ensure the seasonings are evenly distributed. This seasoned chicken is delicious on its own!

Now it’s time to cook the buckwheat noodles. In a large pot of boiling water, add the 2 servings of buckwheat noodles and cook according to the package instructions, or until the noodles are al dente (usually 4-5 minutes).

While the noodles are cooking, thoroughly wash all the vegetables (lettuce, crown daisy, cucumber, carrot, cabbage) and prepare them by thinly slicing or tearing them into bite-sized pieces. Feel free to add any other vegetables you have on hand.

Once the noodles are cooked, quickly drain them and rinse them thoroughly under cold running water to prevent sticking. Drain the noodles very well in a colander; this step is crucial for achieving a chewy texture. Arrange the drained noodles attractively on a serving plate. Your main components are now ready!

It’s time to assemble and mix everything! Arrange the prepared vegetables, seasoned chicken tenderloin, and the hard-boiled egg beautifully over the buckwheat noodles on the plate. Generously drizzle the homemade spicy and sweet bibim sauce over the top. Doesn’t that look mouthwatering? Now, use your chopsticks to toss everything together until the noodles, vegetables, and sauce are well combined. Enjoy this incredibly delicious dish! It’s so good, I might just open a makguksu restaurant! hahaha

Typically, makguksu restaurants serve only fresh vegetables and sauce. However, adding a protein like chicken tenderloin or chicken breast significantly enhances the dining experience by providing a more satisfying chew and boosting the overall flavor. The tender chicken complements the chewy noodles perfectly.
