Mini Gimbap Recipe
Sometimes, you just crave the comforting taste of mini gimbap (kimbap)! These adorable, bite-sized rolls are perfectly seasoned and so delicious that you’ll keep reaching for more, quickly filling you up. They’re much simpler to make than regular gimbap, requiring fewer ingredients, which is why so many people love them. Today, we’re sharing this delightful recipe. Make them easily at home for a perfect snack or packed lunch for the whole family!
Mini Gimbap Ingredients- 10 sheets roasted seaweed (gim)
- 3.5 bowls cooked rice
- Sesame oil (for brushing the outside)
- Salt (for seasoning the rice and brushing the outside)
- 1 bunch spinach
- 8 sticks pickled radish (danmuji)
- 1 carrot
- Cooking oil (for stir-frying vegetables)
Rice Seasoning- 1 Tbsp sesame oil
- 1/2 Tbsp salt
- 1 Tbsp toasted sesame seeds
Spinach Seasoning- 1/2 Tbsp minced garlic
- 1/4 Tbsp salt
- 1/2 Tbsp sesame oil
- 1 Tbsp sesame oil
- 1/2 Tbsp salt
- 1 Tbsp toasted sesame seeds
Spinach Seasoning- 1/2 Tbsp minced garlic
- 1/4 Tbsp salt
- 1/2 Tbsp sesame oil
Cooking Instructions
Step 1
First, julienne the carrot into approximately 6cm (2.4 inches) long strips. Lightly grease a pan with cooking oil and heat it. Add the julienned carrots, season lightly with salt, and stir-fry until they are tender-crisp. (Tip: You can substitute bell peppers for cucumbers if you like! Your mini gimbap will still be delicious even without these optional ingredients.)
Step 2
Cut the pickled radish sticks to about 6cm (2.4 inches) in length to match the size of the seaweed. For the spinach, wash it thoroughly, blanch it, squeeze out excess water, and then gently mix it with the spinach seasoning (1/2 Tbsp minced garlic, 1/4 Tbsp salt, 1/2 Tbsp sesame oil) until well coated.
Step 3
Take your gimbap seaweed sheets and cut each one into four equal pieces. This will create the perfect bite-sized wrappers for your mini gimbap.
Step 4
Allow the freshly cooked rice to cool slightly. In a bowl, combine the rice with the rice seasoning (1 Tbsp sesame oil, 1/2 Tbsp salt, 1 Tbsp toasted sesame seeds). Gently mix with a rice paddle, being careful not to mash the grains, until evenly seasoned.
Step 5
Place a piece of prepared seaweed on your work surface. Spread a thin, even layer of the seasoned rice over the seaweed. Arrange your fillings – the stir-fried carrots, pickled radish, and seasoned spinach – in the center. Carefully roll the seaweed up tightly, ensuring the fillings are enclosed and the roll is firm.

And there you have it! Your delicious mini gimbap rolls are now complete. They look so appetizing, don’t they?
Step 7
Using a pastry brush, lightly coat the outside of each mini gimbap with sesame oil. Then, sprinkle generously with toasted sesame seeds for an extra touch of flavor and visual appeal. Your tasty mini gimbap is ready to be enjoyed!
