Main Ingredients
- 1 squid
- 175g fresh oysters
- 5 large shrimp
- 40g scallions
- 75g onion
Cooking Instructions
Step 1
Let’s start by preparing the squid. You can easily remove the skin using paper towels. Gently rub the skin of the squid with the bumpy side of a paper towel; it should peel off cleanly.
Step 2
Once the squid is cleaned, cut it into bite-sized pieces. You could julienne it, but for these mini pajeons, chopping it finely will help it integrate better into the batter.

It’s important to wash the fresh oysters thoroughly. Add a little coarse sea salt and gently rinse them about three to four times, discarding the cloudy water. Avoid washing them vigorously; instead, use your fingertips to gently dislodge any impurities.

Now, in a bowl for the batter, add the prepared squid and the cleaned oysters. Next, prepare the vegetables.
Step 5
Trim the scallions to a manageable length for eating. If the scallions are thick, cut them in half lengthwise before chopping. This will improve their texture once cooked.

Slice the onion into pieces roughly the same length as the scallions. Try not to slice them too thinly; slightly thicker pieces will provide a more satisfying chew.

I found some large shrimp in the freezer, so I’ll use them. Peel and finely chop 5 shrimp. Adding them to the batter will enhance the seafood flavor significantly.

Now it’s time to mix the batter! Crack 2 eggs into the bowl. Add 1/2 Tbsp of fine salt and 5 Tbsp of all-purpose flour or tempura powder. Do not add any extra water at this stage; the natural moisture from the ingredients should be sufficient to create the batter. Aim for a consistency that isn’t too runny, just enough to bind the ingredients together well.
Step 9
Heat a generous amount of cooking oil in a pan over medium heat. Drop spoonfuls of the batter onto the hot pan, forming small, mini pajeon shapes. Cook until golden brown and crispy on both sides.
