Essential Ingredients

  • 140g unsalted butter, softened to room temperature
  • 6 large eggs, at room temperature
  • 350g cake flour (all-purpose flour can be substituted)
  • 1.5 cups fresh blueberries
  • 300g cream cheese, softened to room temperature
  • 190g granulated sugar
  • 5g baking powder

Cooking Instructions

Step 1

Begin by creaming the softened butter in a mixing bowl until smooth. Then, add the softened cream cheese and beat them together until well combined. Avoid overmixing at this stage.

Step 1

Step 2

Gradually add the granulated sugar in three additions, beating well after each addition until the mixture is light and fluffy. Next, add the room temperature eggs, one at a time, beating thoroughly after each addition to ensure they are fully incorporated. Be careful not to add the next egg until the previous one is completely mixed in to prevent the batter from curdling.

Step 2

Step 3

Sift the cake flour and baking powder together directly into the bowl with the wet ingredients. Gently fold the dry ingredients into the wet mixture using a spatula until just combined. Be careful not to overmix, as this can lead to tough muffins. Finally, gently fold in the fresh blueberries, ensuring they are evenly distributed throughout the batter.

Step 3

Step 4

Divide the batter evenly among the muffin cups, filling each about 80% full to allow for rising. Bake in a preheated oven at 185°C (365°F) for approximately 25 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove the muffins from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
