Broth Ingredients

  • 4.5 cups (approx. 900ml) water
  • 10 dried anchovies for broth
  • 1 sheet (10x10cm) dried kelp (kombu)

Main Ingredients

  • 3 heads of bok choy
  • 1/2 block soft tofu (approx. 150g)
  • 2 eggs

Seasoning

  • 1.5 Tbsp salted fermented shrimp (saeujeot)
  • 0.5 Tbsp minced garlic
  • Pinch of salt or soup soy sauce (adjust to taste)

Cooking Instructions

Step 1

Make the Anchovy-Kelp Broth: In a pot, combine 4.5 cups of water, 10 dried anchovies, and the kelp sheet. Bring to a boil over medium-high heat. Once boiling, reduce the heat to medium-low, remove the kelp immediately, and simmer for another 10 minutes to deepen the flavor. Strain the broth through a fine-mesh sieve to remove solids, yielding a clear broth.

Prepare the Ingredients: Wash the bok choy thoroughly. Trim the very base of each head, then separate the leaves and stems. Cut into bite-sized pieces, about 2-3 sections per head. Dice the tofu into approximately 1.5cm cubes.

Make the Egg Mixture: Crack 2 eggs into a bowl. Add a pinch of salt (this helps break down the egg whites and prevents a strong eggy smell). Whisk gently with a fork or whisk until the yolks and whites are just combined and smooth. Avoid over-whisking.

Combine and Simmer: Return the prepared clear broth to the pot and bring it to a simmer over medium heat. Once simmering, add the diced tofu and cook for 1-2 minutes. Then, add the prepared bok choy. Season the broth with 1.5 Tbsp of salted fermented shrimp and 0.5 Tbsp of minced garlic. Taste and adjust the seasoning with additional salt or soup soy sauce if needed.

Finish the Soup: Once the soup comes back to a gentle boil, slowly drizzle the whisked egg mixture around the edges of the pot in a thin stream. Let the egg set slightly without stirring immediately. Once the egg has formed ribbons or small curds, turn off the heat. The soup is best enjoyed immediately while hot.
