Main Ingredients
  • Harim boneless chicken thigh meat, 2 packs (approx. 300g)
  • Potatoes, 2 medium
  • Onion, 1/2 medium

Sauce Ingredients
  • Water, 500ml
  • Soy sauce, 10 Tbsp
  • Oligosaccharide (or corn syrup), 6 Tbsp (adjust sweetness to taste)
  • Minced garlic, 1 Tbsp
  • Cooking wine or Mirin, 1 Tbsp

Cooking Instructions

Step 1

First, rinse the boneless chicken thigh meat under cold water. Place the chicken in a pot with enough water to cover and bring it to a rolling boil over high heat. This step helps to remove any gamey odor from the chicken. Once boiling, turn off the heat, remove the chicken, rinse it under cold water, and discard the boiling water.

Step 2

Peel the potatoes and cut them into bite-sized cubes (about 2-3 cm). Coarsely chop the onion. Add the cubed potatoes to the pot first, then pour in 500ml of fresh water. (Hold off on adding the onion for now.)

Step 3

In a small bowl, whisk together the soy sauce (10 Tbsp), oligosaccharide (6 Tbsp), minced garlic (1 Tbsp), and cooking wine or Mirin (1 Tbsp) to create the delicious braising sauce. Pour this sauce into the pot with the chicken and potatoes.

Step 4

Bring the mixture to a boil over high heat with the lid off. Once it’s vigorously boiling, reduce the heat to medium. This allows the flavors to meld without the sauce burning.

Step 5

After reducing the heat to medium, add the chopped onion and green onion (if using) to the pot. The sweetness from the onion will enhance the overall flavor of the braised chicken.

Step 6

Continue to simmer over medium heat until the potatoes are fully cooked. You can check if the potatoes are done by piercing them with a fork; it should slide in easily. If they are tender, they are ready.

Step 7

Once the potatoes are tender and the sauce has slightly reduced, your delicious boneless braised chicken is ready! Serve it hot with steamed rice for a truly satisfying meal. It’s a guaranteed hit!
