Main Ingredients

  • 1 block Tofu (approx. 300g)
  • 8 strips Bacon
  • 1/2 Onion
  • 3 Dried Shiitake Mushrooms (or 3 fresh Shiitake Mushrooms)
  • 1/2 stalk Green Onion
  • 1 Korean Green Chili (optional)
  • 1 Red Chili (optional)
  • Pinch of Salt
  • Pinch of Black Pepper

Braising Sauce

  • 200ml Water
  • 5 Tbsp Soy Sauce
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Gochugaru (Korean Chili Flakes)

Cooking Instructions

Pat the tofu dry thoroughly with paper towels. This helps the bacon adhere better and prevents the tofu from breaking apart during braising. Cut the tofu into 8 equal pieces. Lightly season both sides of each tofu piece with salt and pepper for flavor.

Slice the green onion and onion into thin strips (about 0.5cm thick). If using dried shiitake mushrooms, rehydrate them in warm water, squeeze out excess moisture, and slice thinly. If using fresh shiitake, trim the stems and slice thinly. Finely chop the Korean green chilies and red chilies for a pop of color and a hint of spice (you can omit the chilies if you prefer less heat).

Wrap each seasoned tofu piece with a strip of bacon. Tuck the end of the bacon underneath the roll to help it stay in place as it cooks. Gently press to secure the shape.

In a small bowl, combine the water, soy sauce, minced garlic, and gochugaru. Whisk together until well combined to create the braising sauce. Having the sauce ready beforehand will streamline the cooking process.

Heat a skillet over medium heat. Place the bacon-wrapped tofu rolls in the skillet, seam-side down if possible, so they don’t unravel. Sear them until the bacon is golden brown and crispy on all sides. The bacon will render its own fat, so you likely won’t need to add extra oil.

Once the tofu and bacon are nicely browned, pour the prepared braising sauce evenly over the rolls in the skillet. Bring to a simmer over medium heat.

As the sauce begins to reduce by about half, add the sliced green onions, onions, and shiitake mushrooms to the skillet. Continue to simmer, allowing the vegetables to soften and their flavors to meld with the sauce.

When the sauce has thickened to a light glaze, stir in the chopped Korean green chilies and red chilies. Let them cook for another minute or two until fragrant and slightly softened.
