Easy Homemade Korean Side Dish: Making Braised Beef and Abalone Jangjorim
We’ve transformed leftover beef from making a clear beef broth (mutguk) into a delightful jangjorim (braised soy sauce dish) by adding fresh abalone. This savory and slightly sweet dish is a true ‘rice thief,’ guaranteed to make you eat more rice! It’s a perfect example of a comforting, homemade side dish that brings a taste of home.
Main Ingredients- 400g cooked beef brisket (shredded or chunked)
- 7 fresh abalones
Cooking Instructions
Step 1
Start by thoroughly cleaning the abalones. Use a toothbrush to scrub away any dirt or black residue from the shells and along the edges, much like brushing teeth. This ensures they are pristine.
Step 2
To easily remove the abalone meat from the shell, gently insert a spoon between the shell and the meat at the base and pry it away. This technique will cleanly detach the meat.
Step 3
Don’t discard the abalone innards! They can be cooked into a delicious porridge, or finely chopped and stir-fried with vegetables, or even made into savory pancakes. They offer a second delicious dish.
Step 4
Here are the cleaned and prepared abalones, ready to be added to the braising liquid.

This is the beef brisket that was used for the clear beef broth (mutguk). While it was sliced thinly for the soup, we’ve cut it into larger chunks for the jangjorim to provide a more satisfying bite. Since it’s pre-cooked, it’s already tender.
Step 6
We’ve prepared the Cheongyang chilies for a pleasant kick and whole garlic cloves for aroma. If you prefer, you can thinly slice the garlic.
Step 7
In a wide pot, combine the beef broth and water. Bring it to a boil. Once boiling, add the oyster sauce, soju, oligo-syrup, and soy sauce. Initially, boil over high heat. Once the mixture is vigorously bubbling, add the cooked beef and prepared abalones, then reduce the heat to medium.
Step 8
Continue to simmer over medium heat until the liquid has reduced by about half. When the sauce is nicely concentrated, add the Cheongyang chilies and whole garlic cloves. Let it simmer further until the sauce is thick and coats the ingredients well, creating a rich glaze.

Your delicious Braised Beef and Abalone Jangjorim is now ready! The savory soy sauce base, tender beef, chewy abalone, and a hint of spice from the chilies create an irresistible dish that’s perfect with rice.
