Braised Canned Saury with Radish: A Savory Delight

Introducing a recipe for a savory and deeply flavored braised radish using canned saury, easily made at home. Everyone who tries it will be amazed by the incredible ‘jackpot’ taste! It’s also a fantastic side dish for alcoholic beverages, and the complete lack of fishy smell makes it even more enjoyable. This recipe is my own unique creation.

Main Ingredients

  • 1 can of canned saury
  • 3 pieces of daikon radish
  • 100ml water
  • 1 can’s worth of canned saury liquid
  • 1/2 stalk of green onion
  • 1 chili pepper (e.g., Cheongyang chili)
  • A pinch of sesame seeds
  • 1 Tbsp perilla oil
  • A pinch of black pepper

Seasoning Ingredients

  • 4 Tbsp soy sauce
  • 1 Tbsp mirin (rice wine)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp corn syrup (or oligodang)
  • 1 Tbsp red pepper flakes (gochugaru)

Cooking Instructions

Step 1

First, arrange 3 large pieces of daikon radish at the bottom of a pot. Pour in 100ml of water over the radish, cover with a lid, and simmer over very low heat for 10 minutes. This steaming process helps the radish absorb the flavors better and makes it tender.

Carefully drain the liquid from the canned saury into a separate container and set aside. The saury fillets can be left whole, but cutting them into 2-3 bite-sized pieces with scissors will help them absorb the sauce better and taste more delicious.

In the bowl containing the reserved canned saury liquid, add all the prepared seasoning ingredients (4 Tbsp soy sauce, 1 Tbsp mirin, 1/2 Tbsp minced garlic, 1 Tbsp corn syrup, 1 Tbsp red pepper flakes). Mix well to create the braising sauce. Ensure all seasonings are evenly combined.

Arrange the cut saury pieces attractively over the tenderized radish. Pour the prepared braising sauce evenly over the saury. Cover the pot partially, allowing some steam to escape, and start simmering over medium heat. Cook until the sauce thickens and becomes rich. Periodically, spoon some of the simmering liquid over the saury pieces to keep them moist and flavorful.

As it cooks, you’ll notice the sauce gradually reducing. When the radish starts to become translucent and the sauce is nearly absorbed, with the outline of the radish pieces becoming visible, add the sliced green onion and deseeded chili pepper. Continue to simmer to infuse these ingredients’ flavors.

Remove the lid completely and continue to cook until the sauce has almost completely reduced. When the radish is fully transparent and glossy, just before turning off the heat, sprinkle with sesame seeds. Finally, drizzle with 1 Tbsp of perilla oil for an extra nutty aroma. Your delicious braised canned saury with radish is now ready! Enjoy it with a warm bowl of rice for a satisfying meal.
