Braised King Oyster Mushrooms: A Chewy Delight with Deep Flavor
Mushroom Braised with Shiitake and King Oyster Mushrooms
I’m so proud of myself for creating such a delicious dish using just mushrooms! It’s incredibly tasty, so please give it a try. I thought of a new recipe using mushrooms I had leftover one evening, and it was a complete success! This braised dish is a perfect side for rice.
Main Ingredients- 250g Shiitake mushrooms (approx. 12)
- 150g King oyster mushrooms (approx. 2)
- 2 Red chili peppers
- 2 Green chili peppers (or spicy Cheongyang peppers, to taste)
- 7 Stalks of scallions
Braising Sauce- 1 cup Water (approx. 200ml)
- 6 Tbsp Soy sauce
- 1.5 Tbsp Minced garlic
- 2 Tbsp Oyster sauce
- 2 Tbsp Sugar
- 2 Tbsp Corn syrup (or other liquid sweetener)
- 3 Tbsp Sesame oil
- A pinch of Toasted sesame seeds
- 1 tsp Black pepper
- 1 cup Water (approx. 200ml)
- 6 Tbsp Soy sauce
- 1.5 Tbsp Minced garlic
- 2 Tbsp Oyster sauce
- 2 Tbsp Sugar
- 2 Tbsp Corn syrup (or other liquid sweetener)
- 3 Tbsp Sesame oil
- A pinch of Toasted sesame seeds
- 1 tsp Black pepper
Cooking Instructions
Step 1
Clean the shiitake and king oyster mushrooms thoroughly. Don’t discard the tough bottom stems of the mushrooms; you can set them aside to make a flavorful broth later. Slice the mushrooms a bit thickly so they have a pleasant chewiness when braised.
Step 2
Remove the seeds from the red and green chili peppers and slice them lengthwise. Cut the scallions into similarly long pieces. If you prefer a spicier kick, you can substitute the green chili peppers with hotter Korean Cheongyang peppers.
Step 3
In a bowl, combine the prepared mushrooms with 1 cup of water, 6 Tbsp soy sauce, 2 Tbsp sugar, 2 Tbsp corn syrup, 2 Tbsp oyster sauce, 1.5 Tbsp minced garlic, and 1 tsp black pepper. Mix well to ensure the mushrooms are evenly coated. Let them marinate for about 30 minutes to allow the flavors to penetrate.
Step 4
Transfer the marinated mushrooms to a pot and place it over medium heat. Add the sliced red and green chili peppers. Cover the pot and let it simmer until the sauce has reduced and thickened slightly. Keep an eye on it to prevent the sauce from burning.
Step 5
Once the sauce has reduced to your liking, add the chopped scallions, 3 Tbsp sesame oil, and a pinch of toasted sesame seeds. Sauté briefly just until the scallions are slightly tender. Your delicious braised mushroom dish is now ready!
