Main Ingredients

  • 1 pack of cleaned mackerel
  • 1 chili pepper (e.g., Cheongyang pepper)
  • 1/3 stalk of green onion

Seasoning

  • 1/2 tsp doenjang (fermented soybean paste)
  • 1/2 Tbsp fish sauce
  • 1 Tbsp gochugaru (red pepper flakes)
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp ginger syrup (or minced fresh ginger)
  • 1 Tbsp rice wine (or cooking wine)

Cooking Instructions

Step 1

To make this delicious braised mackerel with aged kimchi, start by lining the bottom of a pot with 3-4 leaves of aged kimchi. If the kimchi leaves are too long, cut them in half so they fit nicely in the pot.

Step 1

Step 2

Gently place the cleaned mackerel pieces on top of the kimchi. Now, let’s prepare the seasoning. In a small bowl, combine 1/2 tsp doenjang, 1/2 Tbsp fish sauce, 1 Tbsp gochugaru, 1/2 Tbsp minced garlic, 1/2 Tbsp ginger syrup, and 1 Tbsp rice wine. Mix well to create a flavorful paste and spread it evenly over the mackerel.

Step 2

Step 3

Slice the chili pepper diagonally and add it to the pot. Pour in 1/3 cup of water. Cover the pot and bring it to a boil over medium-high heat. Let it simmer to allow the ingredients to cook through and meld their flavors.

Step 3

Step 4

Once the stew is boiling, reduce the heat to medium-low. Remove the lid and spoon the broth over the mackerel and kimchi as it cooks, allowing it to braise. Continue to cook until the liquid has reduced to a nice, savory sauce coating the ingredients. Finally, add the sliced green onion and simmer for another minute to finish. Your deeply flavorful and spicy mackerel with aged kimchi is now ready to be enjoyed!
