Main Ingredients- 160g Beef for Shabu-shabu
- 40g Chives
- 1/3 King Oyster Mushroom (or other firm mushroom)
- 120g Bell Pepper (using various colors will make it visually appealing!)
- 11 Perilla Leaves (Shiso)
- 2g Salad Sprouts (like radish sprouts)
Meat Seasoning- Pinch of salt
- Pinch of black pepper
- Pinch of dried garlic powder (or 1/2 tsp minced garlic)
Sauce- 1 Tbsp Soy Sauce
- 2/3 Tbsp Sugar
- 1 Tbsp Mirin (Sweet Rice Wine)

Cooking Instructions
Step 1
First, let’s prepare the vegetables. Wash the chives and cut them into approximately 7cm lengths. Separate the king oyster mushroom into smaller clumps of about 5-6 strands. Thinly slice the bell pepper into strips. Rinse the salad sprouts under cold water and drain.
Step 2
Wash the perilla leaves thoroughly. Trim off the stem end and cut each leaf in half. This makes them easier to layer and roll with the meat.
Step 3
Now, let’s season the beef. Sprinkle salt, black pepper, and dried garlic powder (or minced garlic) evenly over the thinly sliced shabu-shabu beef. Lay out one slice of seasoned beef, then place a perilla leaf on top. Arrange a portion of the prepared chives, king oyster mushroom, bell pepper, and salad sprouts in the center. Carefully roll the ingredients tightly from one end to the other, ensuring they don’t spill out.
Step 4
Heat a lightly oiled skillet over medium-high heat. Place the rolled meat and vegetable bundles seam-side down in the hot pan. Sear them until golden brown on all sides, turning them gently to ensure even cooking. Since the beef is thinly sliced for shabu-shabu, it will cook very quickly.
Step 5
Once the beef is nicely browned all over, pour in the sauce mixture made with soy sauce, sugar, and mirin. Tilt the pan and spoon the sauce over the rolls, or gently stir them in the sauce, allowing them to simmer and glaze until beautifully coated and fragrant.
