Main Ingredients: Braised Oxtail
- 1kg Oxtail, prepared
- 1 Tbsp minced garlic
- 1 Tbsp minced ginger
- 2-3 Bay leaves
- 1-2 Liters water (enough to cover the oxtail)
Side Dish Ingredients: Chive Salad
- 1/2 bunch fresh chives
- 5 Tbsp soy sauce
- 5 Tbsp vinegar
- 1/2 bunch fresh chives
- 5 Tbsp soy sauce
- 5 Tbsp vinegar
Cooking Instructions
Step 1
Begin by thoroughly soaking the frozen oxtail in cold water to remove any blood. This crucial step helps eliminate any gamey odors and results in exceptionally tender meat. We recommend soaking for at least 4 hours, or preferably overnight.
Step 2
Once the oxtail has been drained of blood, blanch it in boiling water for about 10 minutes. This process removes impurities and excess fat from the surface, ensuring a cleaner and more delicious final dish. After blanching, rinse the oxtail under cold water and meticulously trim away any remaining fat.
Step 3
Now, let’s start the braising process. Place the cleaned oxtail in a pot along with 1-2 liters of water, 2-3 bay leaves, 1 tablespoon of minced garlic, and 1 tablespoon of minced ginger. Bring to a boil over high heat and cook for 1 hour. Then, reduce the heat to medium and continue simmering for another hour. This slow cooking process will allow the meat to become incredibly tender and fall off the bone.
Step 4
While the oxtail is braising, prepare the refreshing chive salad. Wash the fresh chives thoroughly and cut them into bite-sized pieces, about 1 cm in length. In a bowl, combine the chives with 5 tablespoons of soy sauce and 5 tablespoons of vinegar. Gently toss everything together until well combined for a perfectly balanced sweet and tangy chive salad.
Step 5
To add a delightful chewy texture, prepare some noodles. Cook the desired amount of noodles in boiling water until al dente, then rinse them under cold water and drain well.
Step 6
Once the oxtail is perfectly tender, generously top the braised oxtail with the prepared chive salad. The vibrant combination of the rich oxtail and the fresh green chives creates a visually appealing and appetizing dish.
Step 7
Finally, serve the braised oxtail with the chive salad and the cooked noodles. Mixing the noodles with the chive salad and the savory broth will recreate the exquisite taste of Daehanok’s oxtail stew right in your own home! Enjoy a hearty and satisfying meal with this deeply flavorful dish.
