While beef is commonly used for jorim (braised dishes), today we’re making a delicious braised dish using tender and flavorful pork tenderloin. Pork tenderloin is known for its soft texture and rich iron content, making it an excellent choice for children. Let’s embark on making this healthy and tasty braised pork! Let’s Go!

Main Ingredients

  • Pork tenderloin 700g
  • Eggs 6
  • Pinch of salt (for boiling)
  • 1 Tbsp vinegar (for boiling)

Ingredients for Boiling Pork

  • Water 5 cups
  • 1 stalk Green onion
  • 1/2 Onion
  • 6 cloves Garlic
  • 1 slice Ginger (thumbnail size)
  • 10 Peppercorns
  • 2 Bay leaves

Braising Sauce Ingredients

  • Water 4 cups (paper cup measurement)
  • 1/2 cup Soy sauce
  • 5 Tbsp Mirin (or cooking wine)
  • 2 Tbsp Sugar
  • Pinch of Black pepper

Optional Ingredient

  • 15 Young green chili peppers (kwari gochu)

Cooking Instructions

Step 1

First, prepare all the ingredients for the dish. Get your eggs ready for boiling, and if you’re using young green chili peppers, poke them with a fork beforehand.

Place the eggs in a pot and add enough water to just cover them. Add a pinch of salt and 1 tablespoon of vinegar. Boil the eggs as you normally would, typically for about 10-12 minutes, until hard-boiled. The vinegar helps prevent the shells from cracking and makes them easier to peel.

Prepare the vegetables that will be added while boiling the pork. Since these will be discarded later, simply cut the green onion into lengths that fit into the pot. The onion, garlic, and ginger only need to be washed and can be added whole. If using young green chili peppers, prick each pepper once or twice with a fork. This allows the sauce to penetrate better during braising, making them more flavorful.

Cut the pork tenderloin into roughly 6cm (about 2.5 inch) long pieces. Cutting them too small might cause them to break apart during boiling.

Your hard-boiled eggs are ready! Immediately rinse them under cold water to cool them down, then carefully peel the shells and set them aside. The boiled eggs will add a wonderful flavor and texture to the braised dish.

Now, prepare a new pot for boiling the pork. Add 5 cups of water and include the prepared green onion, onion, 6 cloves of garlic, ginger slice, 10 peppercorns, and 2 bay leaves. Boiling the pork with these aromatics will effectively remove any gamey odors.

Once the water comes to a rolling boil, add the pork tenderloin pieces. Reduce the heat to medium and boil for about 20 minutes, ensuring the pork is cooked through.

After 20 minutes, carefully remove the cooked pork from the pot using a sieve. Discard the pork-boiling water and the aromatics. It’s now time to create the delicious braising sauce.

In a clean pot, combine all the braising sauce ingredients. Add 4 cups of water (using a paper cup as measurement), 1/2 cup of soy sauce, 5 tablespoons of mirin, 2 tablespoons of sugar, and a pinch of black pepper. Stir well until the sugar is dissolved, and bring it to a boil over medium heat.

Once the sauce is boiling, add the boiled pork and the young green chili peppers (if using). Reduce the heat to medium-low and let it simmer for about 13-15 minutes, allowing the sauce to thicken and coat the pork evenly. Stir occasionally to ensure even cooking.

Now, add the peeled hard-boiled eggs to the pot. Continue to simmer for another 5 minutes, allowing the flavors to meld. Cook until the sauce has slightly reduced and coats the ingredients with a glossy sheen. Turn off the heat. Be mindful not to over-reduce the sauce, as it can become too salty.

Once the braising is complete, carefully remove the pork pieces from the pot and let them cool slightly. Once cooled enough to handle, shred the pork along the grain into bite-sized pieces. Shredding allows the sauce to penetrate more deeply and creates a more tender texture.
