Braised Pork and Potato Rice Bowl

I received a generous amount of potatoes from my parents’ home and wondered how to cook them. Since I was craving a rice bowl dish, I decided to make this! It’s a perfect dish for any meal, combining tender pork and soft potatoes in a wonderfully sweet and savory glaze, served over rice. It’s simple yet elegant, and sure to enrich your dining table!
Main Ingredients- 300g pork shoulder (or neck, belly, etc. are also great)
- 2 medium potatoes (or several small ones)
- 2 egg yolks (for garnish)
Seasoning Ingredients- 1 Tbsp minced garlic
- Pinch of salt
- Pinch of black pepper
- 1.5 Tbsp cooking oil (about two swirls in the pan)
- 3 Tbsp cornstarch
- 4 Tbsp soy sauce
- 2 Tbsp oligosaccharide (or corn syrup)
- 2 Tbsp cooking wine (mirin)
- 1 Tbsp oyster sauce
- 1 Tbsp minced garlic
- Pinch of salt
- Pinch of black pepper
- 1.5 Tbsp cooking oil (about two swirls in the pan)
- 3 Tbsp cornstarch
- 4 Tbsp soy sauce
- 2 Tbsp oligosaccharide (or corn syrup)
- 2 Tbsp cooking wine (mirin)
- 1 Tbsp oyster sauce
Cooking Instructions
Step 1
First, let’s prepare the main ingredients. You’ll need 2 medium-sized potatoes. If you’re using small potatoes, feel free to use a few more. For the pork, 300g of pork shoulder is specified, but you can also use neck or belly cuts for a different, equally delicious texture.

Cut the potatoes and pork into bite-sized cubes. Cutting everything into similar sizes ensures even cooking and makes for a more appealing presentation.

Heat a deep pan or wok over low heat. Add 1 Tbsp of minced garlic and sauté until fragrant and lightly golden, almost fried. This step really enhances the aromatic flavor of the garlic without burning it.

Once the garlic is fragrant, add the cubed pork to the pan.

Add the cubed potatoes to the pan along with the pork.

Now, add another 1.5 Tbsp of cooking oil. You can estimate this by swirling the oil around the pan twice.

Season with a pinch of salt and a pinch of black pepper. Increase the heat to medium and stir-fry the ingredients until they are lightly browned and almost fried. The pork should be cooked through on the outside, and the edges of the potatoes should start to look slightly translucent.

Once the ingredients are partially cooked, add 3 Tbsp of cornstarch. Toss everything well to coat the pork and potatoes evenly with the cornstarch.

Continue stir-frying. The cornstarch will help create a slightly crispy, delicious coating on the ingredients. Cook until the white powderiness of the cornstarch disappears and it forms a light glaze.

Now it’s time to add the braising sauce! Start by pouring 4 Tbsp of soy sauce into the pan.

Add 2 Tbsp of oligosaccharide (or corn syrup) for a touch of sweetness.

Pour in 2 Tbsp of cooking wine (mirin) to help tenderize the pork and add depth of flavor.

Finally, add 1 Tbsp of oyster sauce for that savory umami boost. Stir everything together to combine the sauces.

Reduce the heat to medium-low and continue to cook, stirring occasionally, until the sauce thickens and coats the ingredients beautifully. The potatoes should be tender when pierced with a fork, and the flavors will meld together perfectly. You’ll have a glossy, delicious braised pork and potato dish!

Serve the braised pork and potatoes generously over a bowl of warm rice. Gently place two egg yolks on top.
