Braised Potatoes and Korean Hot Peppers

Main Ingredients

  • 400g potatoes
  • 7 Korean hot peppers (Ggwari-gochu)

Braising Sauce

  • 2 Tbsp soy sauce
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp fish sauce or anchovy sauce
  • 1 Tbsp minced garlic
  • 1 Tbsp cooking oil
  • 1 Tbsp sesame seeds (crushed)
  • 1 Tbsp sesame oil
  • 2 cups water

Cooking Instructions

Step 1

Cut the larger potatoes into bite-sized pieces. Trim the stems off the Korean hot peppers and cut them in half lengthwise. In a bowl, combine the soy sauce, gochugaru, fish sauce, minced garlic, crushed sesame seeds, and sesame oil. Add 2 cups of water and mix well to create the braising sauce.

Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the cut potatoes and stir-fry until they are lightly golden brown. Searing the potatoes first helps them absorb the sauce better.

Once the potatoes are partially cooked, pour in the prepared braising sauce and stir to combine. Bring the mixture to a boil over high heat, then reduce to medium-low heat.

Cover the pan and let the potatoes simmer until they are tender and fluffy, about 10-15 minutes. Stir occasionally to prevent the potatoes from sticking or burning.

When the potatoes are almost fully cooked and the sauce has reduced to a simmer, add the halved Korean hot peppers. Stir quickly to coat them in the sauce. It’s important not to overcook the peppers to maintain their crisp texture. Continue to cook for just another 1-2 minutes to finish.

Transfer the finished braised potatoes and hot peppers to a serving dish. Sprinkle with whole sesame seeds for a final garnish. This dish is best enjoyed warm!

Around the time fresh potatoes are in season, steaming them until fluffy is also a delicious treat! With the potatoes harvested this time, we can enjoy them steamed a few more times.
