Main Ingredients

  • 2 medium potatoes
  • 1 cup king oyster mushrooms, cut into bite-sized pieces
  • 1/2 onion
  • A small amount of carrot (for color and texture)
  • 5 cloves garlic

Braising Sauce

  • 1 cup soy sauce (approx. 200ml)
  • 1 cup water (approx. 200ml)
  • 3-5 Tbsp corn syrup or honey (adjust sweetness to your preference)

First, prepare the vegetables. Cut the potatoes and carrots into bite-sized cubes. Slice the king oyster mushrooms into halves or thirds, depending on their size. Mince or thinly slice the garlic. Having all ingredients prepped makes the cooking process smooth.

In a pot or a pan suitable for braising, combine 1 cup of soy sauce, 1 cup of water, and 3-5 tablespoons of corn syrup (or honey). Add the sliced garlic. Stir everything together until well combined. (The basic ratio of soy sauce to water is 1:1. If you find it too salty, feel free to add more water. You can also adjust the sweetness by adding more or less corn syrup.)

Bring the sauce to a simmer over medium-low heat. Once simmering, add the prepared potatoes, carrots, and king oyster mushrooms to the pot. Braise with the lid off, stirring gently and occasionally. This allows the sauce to reduce and evenly coat the ingredients. Keep the heat on medium-low to prevent burning.

When the potatoes are about halfway cooked and beginning to soften, add the sliced onion. The onion will add a natural sweetness and enhance the overall flavor. Continue to braise until the onions become translucent and slightly tender, about 5-7 more minutes. Adjust the heat to ensure the sauce thickens to your desired consistency.
