Braised Radish Ingredients
  • Radish, a suitable size (approx. 500g)
  • Water, 450ml (about 4 cups)
  • Dashima (Kelp) pack or Seafood broth pack, 1
  • Soy sauce, 6 Tbsp (standard paper cup)
  • Red pepper flakes, 2 Tbsp
  • Sugar, 2 Tbsp
  • Minced garlic, 1/2 Tbsp
  • Green onion, 1/2 stalk (to taste)

Radish Soup Ingredients
  • Soup soy sauce, 1.5 Tbsp
  • Minced garlic, 1/2 Tbsp
  • Mirin (cooking sake), 1 Tbsp

Cooking Instructions

Step 1

Let’s start with the braised radish. Wash the radish thoroughly, peel it, and then cut it into bite-sized pieces, about 2-3 cm thick, such as half-moons or rounds. Cutting them to a consistent thickness ensures even cooking.

Step 2

To make both the braised radish and radish soup deliciously at the same time, we first need to make a flavorful broth. Pour 450ml (about 4 cups) of water into a pot. Once it starts boiling, add the dashima pack or seafood broth pack and simmer for about 10 minutes to create a rich broth. Using a pack significantly enhances the umami flavor.

Step 3

Meanwhile, let’s make the delicious seasoning sauce for the braised radish! In a bowl, combine 6 Tbsp of soy sauce, 2 Tbsp of red pepper flakes, 2 Tbsp of sugar, and 1/2 Tbsp of minced garlic. Mix them thoroughly. Your golden ratio sauce is ready!

Step 4

Once the broth has steeped sufficiently, remove the dashima pack. At this point, reserve about 1/4 of the total broth for the braising pot, and transfer the remaining 3/4 to another pot for the radish soup. Dividing the broth allows you to efficiently prepare both dishes simultaneously.

Step 5

Now, in the pot with the reserved 1/4 portion of broth, arrange the pre-cut radish pieces attractively. Arranging them without overlapping ensures the seasoning penetrates evenly, making them even more delicious.

Step 6

Once the radish is nicely arranged, pour the delicious homemade sauce evenly over the radish pieces. Cover the pot and bring it to a boil over high heat so the seasoning can soak into the radish.

Step 7

When the braised radish starts to bubble, reduce the heat to low and cover with a lid. Let it simmer gently until the radish becomes translucent and the sauce thickens slightly. Once you confirm the radish is tender and infused with the delicious sauce, add a generous amount of diagonally sliced green onions. Cook for another moment until the green onions wilt slightly. Your splendid braised radish is complete! It’s incredibly delicious served over rice.

Step 8

Now, let’s make the radish soup. If you’re experienced, you can actually switch the order of making the braised radish and the soup. For the radish soup, slice the radish as you prefer. You can thinly julienne it or cut it into small cubes, according to your taste.

Step 9

Add all the sliced radish to the pot containing the 3/4 portion of broth that you transferred earlier, and bring it to a boil again. Continue boiling until the radish becomes translucent.

Step 10

Once the radish is adequately cooked and starts boiling, season the soup. Add 1/2 Tbsp of minced garlic and 1.5 Tbsp of soup soy sauce, then taste. If it’s bland, adjust with more soup soy sauce or salt according to your preference. Finally, add sliced green onions as desired and simmer briefly. Your refreshing and delicious radish soup is ready!
