Main Ingredients

  • 2 small potatoes
  • 1/2 onion
  • 2 stalks green onions (scallions)
  • 3 Korean chili peppers (cheongyang peppers)
  • 1 can (approx. 15 oz) canned saury

Seasoning

  • 3 Tbsp soy sauce
  • 2 Tbsp corn syrup (or other liquid sweetener)
  • 1 Tbsp minced garlic
  • 1 Tbsp fine gochugaru (Korean chili powder)
  • 3 Tbsp coarse gochugaru (Korean chili powder)
  • 1.5 cups water (approx. 270ml)

Cooking Instructions

Let’s start by preparing the vegetables for the seasoning. Have your minced garlic ready. Slice the onion into thick strips. Mince the Korean chili peppers and slice the green onions diagonally.

Wash the potatoes thoroughly, then cut them into about 1.5 cm thick half-moon shapes. Cutting them too thin might cause them to break apart while cooking, so aim for a sturdy thickness. Place the cut potatoes in a pot. Add 3 Tbsp soy sauce, 2 Tbsp corn syrup, 1 Tbsp fine gochugaru, and 3 Tbsp coarse gochugaru. Mix well to coat the potatoes evenly with the seasoning.

Pour in half a cup (about 135ml) of water into the seasoned potatoes. Cover the pot with a lid and bring to a boil over medium heat. While the potatoes are cooking, you can prepare the other ingredients to save time.

After about 10 minutes of boiling, open the lid to check on the potatoes. They should be tender and fluffy. You can test for doneness by piercing a potato with a chopstick or fork; it should go in easily.

Now it’s time to prepare the saury. Open the can of canned saury.

Add the canned saury directly into the pot. Don’t discard the liquid from the can – pour it in as well, as it adds a deeper flavor to the stew.

After adding the saury and its liquid, pour in the remaining half cup (about 135ml) of water. Add an additional 1 Tbsp of coarse gochugaru. Cover the pot again and simmer for about 5 more minutes, allowing the saury to absorb the flavors of the sauce.

Finally, add the minced garlic, sliced onion, minced chili peppers, and diagonally sliced green onions to the pot. If you prefer a spicier dish, feel free to add a little more gochugaru.
