  • 1 pack Shishito peppers (approx. 200g)
  • 1/2 cup Garlic (approx. 50g, sliced or halved)

Seasoning Ingredients

  • 1 Tbsp Soy Sauce
  • 1 Tbsp Oligodang (Korean corn syrup) or honey
  • 1 Tbsp Toasted Sesame Seeds

First, wash the shishito peppers thoroughly under running water and pat them completely dry. It’s important to remove all moisture, as any remaining water can cause oil to splatter during cooking. Prepare the garlic by slicing it thinly or halving it, depending on your preference for garlic intensity.

Heat a wide pan over high heat. Add the shishito peppers first and stir-fry for 1-2 minutes to evaporate any moisture and lightly char the skins. This step helps maintain the crisp texture of the peppers. Temporarily remove the peppers from the pan. Add a little cooking oil to the pan and sauté the garlic. Cook over medium-low heat to prevent the garlic from burning and be cautious of oil splattering.

Once the garlic is lightly golden, return the stir-fried shishito peppers to the pan. Reduce the heat to medium and add 1 Tbsp of soy sauce. Toss everything together to ensure the peppers and garlic are evenly coated with the sauce. Stirring continuously is key to letting the soy sauce penetrate the ingredients.

Continue to stir-fry over medium heat for another 2-3 minutes until the soy sauce has reduced and the ingredients look glossy. It’s a good idea to taste as you go to ensure the sauce isn’t too salty. Once the ingredients are well-seasoned and the sauce is slightly thickened, turn off the heat. Stir in 1 Tbsp of oligodang (or honey) to add sweetness and shine. Finish by sprinkling 1 Tbsp of toasted sesame seeds for an added nutty aroma, making the dish even more delicious.
