Ingredients

  • 300g Tofu (about 1 block)
  • 2/3 can Spam (about 200g)
  • 1 Potato (medium-sized)
  • 0.5 Onion (medium-sized)
  • 1 Cheongyang chili pepper
  • 1 piece Green onion (about 10cm)

Seasoning

  • 4 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Sugar
  • 1 Tbsp Minced garlic
  • 1.5 Tbsp Tuna extract (or fish sauce)
  • 4 Tbsp Soy sauce
  • 300ml Water (about 1.5 cups)

Cooking Instructions

First, wash and peel the potato, then slice it thinly into half-moon shapes. Aim for about 0.5cm thickness, as thicker slices will take longer to cook.

Peel the onion, cut it into quarters, and then chop it into bite-sized pieces, about 2-3cm. This ensures it cooks evenly and is easy to eat.

Wash the green onion piece (about 10cm) and slice it into small, coin-like pieces. This adds a nice visual touch and aromatic flavor.

Finely chop the Cheongyang chili pepper after removing the stem. This pepper adds a pleasant spicy kick, but feel free to adjust the amount to your preference.

Rinse the tofu (300g) under running water and cut it into large, bite-sized cubes, about 2-3cm. Cutting the tofu a bit thicker helps it maintain its shape and texture during the braising process.

Open the Spam can and cut the 2/3 portion (about 200g) into slices roughly 1.5cm thick, similar to how you would when eating it fried.

In a bowl, combine the gochugaru, sugar, minced garlic, soy sauce, and tuna extract. Stir well with a spoon until the seasoning paste is smooth and well-mixed. If you don’t have tuna extract, fish sauce like anchovy or sand lance sauce can be used as a substitute.

In a pot or deep pan, spread the sliced potatoes and onions evenly across the bottom. Pour about half of the prepared seasoning mixture over the vegetables.

Arrange the cubed tofu and sliced Spam on top of the vegetables. Pour the remaining seasoning mixture evenly over everything, ensuring all ingredients are coated.

Add the 300ml of water to the pot, pouring it around the edges. The liquid should mostly cover the ingredients; it will reduce as it simmers.

Turn the heat to medium and bring the stew to a boil. Once boiling, add the chopped green onions and Cheongyang chili peppers. Continue to simmer, allowing the flavors to meld.

While the stew is simmering, ladle some of the sauce from the bottom of the pot over the tofu and Spam periodically. This helps the ingredients absorb the flavor deeply. Continue to braise until the liquid has reduced by about half, which should take approximately 10-15 minutes. Keep an eye on it to prevent sticking.
