  • 1 tsp minced garlic
  • 1 Tbsp soy sauce
  • 1 handful of dried anchovies
  • 1 Tbsp cooking oil
  • A pinch of sesame seeds
  • 1 tsp oligosaccharide

Cooking Instructions

Step 1

This dish is perfect for children who can’t eat spicy food! Let’s start making this braised young radish kimchi, ‘Sumi’s Side Dishes’ style.

Step 1

Step 2

First, rinse the young radish kimchi lightly to remove the excess seasoning from the outside. Be careful not to wash too vigorously, as it can affect the flavor. Just a quick rinse, drain, and set aside.

Step 2

Step 3

In a dry, unheated frying pan, add the dried anchovies. Stir-fry them over medium-low heat until fragrant to remove any fishy smell. This process enhances their savory flavor.

Step 3

Step 4

Now, add the rinsed and drained young radish kimchi to the pan. Stir in 1 tsp minced garlic, 1 Tbsp soy sauce, the handful of stir-fried anchovies, 1 Tbsp cooking oil, a pinch of sesame seeds, and 1 tsp oligosaccharide.

Step 4

Step 5

Sauté everything briefly, then add enough water to just cover the kimchi. Cover the pan and simmer over medium-low heat for about 15-20 minutes, allowing the kimchi to soften and absorb the flavors.

Step 5

Step 6

Once the kimchi is tender, remove the lid and continue to cook over medium heat until the liquid has mostly evaporated and thickened into a glaze.

Step 6

Step 7

Finally, sprinkle with sesame seeds to finish. For an extra nutty aroma, you can drizzle in a little perilla oil to your preference. Enjoy your delicious braised young radish kimchi!
