Let’s make a deeply flavorful braised dish using well-fermented young radish kimchi. It’s a delicious way to enjoy aged kimchi.
Ingredients- 1 bowl of well-fermented young radish kimchi
- 1 tsp minced garlic
- 1 Tbsp soy sauce
- 1 handful of dried anchovies
- 1 Tbsp cooking oil
- A pinch of sesame seeds
- 1 tsp oligosaccharide

First, rinse the young radish kimchi lightly to remove the excess seasoning from the outside. Be careful not to wash too vigorously, as it can affect the flavor. Just a quick rinse, drain, and set aside.

In a dry, unheated frying pan, add the dried anchovies. Stir-fry them over medium-low heat until fragrant to remove any fishy smell. This process enhances their savory flavor.

Now, add the rinsed and drained young radish kimchi to the pan. Stir in 1 tsp minced garlic, 1 Tbsp soy sauce, the handful of stir-fried anchovies, 1 Tbsp cooking oil, a pinch of sesame seeds, and 1 tsp oligosaccharide.

Sauté everything briefly, then add enough water to just cover the kimchi. Cover the pan and simmer over medium-low heat for about 15-20 minutes, allowing the kimchi to soften and absorb the flavors.
Step 6
Once the kimchi is tender, remove the lid and continue to cook over medium heat until the liquid has mostly evaporated and thickened into a glaze.
