Main Ingredients

  • 1 handful fresh broccoli (approx. 100-150g)
  • 4 fresh eggs
  • 100ml milk
  • A little paprika (optional, approx. 30g)
  • A little mushrooms (e.g., button, king oyster, approx. 30g)
  • 1 handful bacon (approx. 50g)
  • 3 cloves garlic
  • 1 tablespoon butter
  • A little dried parsley
  • A little grated Parmesan cheese (optional)

Seasoning

  • A pinch of salt
  • A pinch of black pepper

Cooking Instructions

Step 1

Thoroughly wash the fresh broccoli under running water. Cut it into bite-sized florets. You can also peel the tough outer layer of the stem and use the tender inner part.

Step 1

Step 2

Bring a pot of water to a boil and blanch the broccoli florets for about 1-2 minutes. This helps retain their vibrant green color and a slight crispness. Immediately drain the broccoli and rinse it under cold water to stop the cooking and remove excess water.

Step 2

Step 3

In a large bowl, crack the 4 fresh eggs. Whisk them gently, breaking up the egg whites.

Step 3

Step 4

Pour 100ml of milk into the whisked eggs. Add a pinch of salt and a pinch of black pepper, then mix well. You can adjust the seasoning to your preference.

Step 4

Step 5

Set this delicious egg and milk mixture aside. Once all your ingredients are prepped, you’re ready to start cooking.

Step 5

Step 6

Dice the prepared vegetables like paprika and mushrooms into bite-sized pieces, similar to the broccoli. Cut the bacon into bite-sized pieces as well. Thinly slice the garlic into slivers to release its aroma.

Step 6

Step 7

Heat a frying pan over medium heat and melt 1 tablespoon of butter. The pan will become fragrant as the butter melts.

Step 7

Step 8

Once the butter is melted, add the sliced garlic and diced bacon to the pan. Sauté over medium-low heat. Be careful not to burn the garlic, and cook the bacon until it’s golden and has rendered some of its fat.

Step 8

Step 9

When the garlic and bacon are nicely browned, add all the prepared vegetables (broccoli, paprika, mushrooms, etc.) to the pan. Sprinkle with a little salt and pepper, and stir-fry for 1-2 minutes, just until the vegetables are slightly softened.

Step 9

Step 10

Carefully pour the prepared egg mixture over the sautéed vegetables and bacon. Reduce the heat to low, cover the pan with a lid, and cook for about 10 minutes. The frittata is done when the eggs are set and the top is firm to the touch. Finally, sprinkle with dried parsley and grated Parmesan cheese for a beautiful Italian egg bake, Frittata!
