Main Ingredients- 1 head of broccoli (small)
- A small amount of bell peppers (various colors)
Dressing Ingredients- 1 Tbsp doenjang (Korean soybean paste)
- 1/2 Tbsp mayonnaise
- 1/2 tsp minced garlic
- 1 tsp chopped green onions
- 1 tsp black sesame seeds
- 1 Tbsp doenjang (Korean soybean paste)
- 1/2 Tbsp mayonnaise
- 1/2 tsp minced garlic
- 1 tsp chopped green onions
- 1 tsp black sesame seeds
Cooking Instructions
Step 1
First, cut the broccoli into bite-sized florets. If a floret is too large, cut it in half. Don’t discard the broccoli stems! Peel the tough outer layer of the stems, then thinly slice them and blanch them along with the florets to minimize waste. Fill a pot with 1 liter of cold water and bring it to a boil over high heat. Once boiling, add 1 Tbsp of coarse sea salt, then add the prepared broccoli (and stems). Blanch for 1-2 minutes. Be careful not to overcook, as it will become mushy.
Step 2
Immediately after blanching, drain the broccoli and rinse it quickly under cold running water. This step is crucial for retaining the broccoli’s vibrant green color and helps cool it down, preserving its crisp texture.
Step 3
Drain the rinsed broccoli well in a colander. Gently pat it dry with paper towels to remove any excess moisture. This ensures the dressing adheres well and creates a more flavorful salad.
Step 4
Prepare the mini bell peppers by removing the seeds and thinly slicing them into strips, similar in size to the broccoli. Using a variety of colors will make the salad visually appealing and add a subtle sweetness.
Step 5
In a large mixing bowl, combine the drained broccoli and the sliced bell peppers. Using a spacious bowl will make it easier to mix everything thoroughly without crushing the ingredients.
Step 6
Now, let’s make the delicious dressing. Add 1 Tbsp of doenjang and 1/2 Tbsp of mayonnaise to the bowl. Mix in 1/2 tsp of minced garlic and 1 tsp of finely chopped green onions. Stir everything together until well combined. The mayonnaise helps to mellow the saltiness of the doenjang and adds a creamy, savory note.
Step 7
Pour the prepared dressing over the broccoli and bell peppers. Gently toss everything together until all the ingredients are evenly coated with the dressing. Avoid vigorous mixing, as it can break down the broccoli. The final touch is to sprinkle 1 tsp of black sesame seeds over the salad for added texture and visual appeal. Your healthy and delicious Broccoli Doenjang Salad is ready to enjoy! It’s great served immediately or chilled.
