Broccoli and King Oyster Mushroom Stir-Fry: A Nutritious and Delicious Dish

My mom really loves broccoli, especially since she knows it’s good for her joints! Broccoli is packed with Vitamin C and E, which are excellent for joint health. Vitamin C, in particular, aids in the body’s absorption of collagen, crucial for cartilage. Hailed as one of the top 10 healthiest foods globally, broccoli is a nutritional powerhouse. This recipe combines the goodness of broccoli with the chewy texture of king oyster mushrooms and the crispness of bell peppers for a dish that’s as healthy as it is tasty. It’s simple enough for even beginner cooks!

Main Ingredients

  • 1 head broccoli
  • 1 king oyster mushroom
  • 1 bell pepper (any color)
  • 2 cloves garlic

Cooking Instructions

Step 1

First, wash the broccoli thoroughly. Cut it into bite-sized florets (about 2-3 cm). Blanch the broccoli in boiling water for about 30 seconds to 1 minute, then immediately rinse under cold water to stop the cooking and drain well. This step helps retain its vibrant color and crisp texture.

Step 1

Step 2

Thinly slice the garlic cloves. Heat 1-2 tablespoons of cooking oil in a pan over medium-low heat. Add the sliced garlic and sauté gently until fragrant and lightly golden, infusing the oil with garlic flavor. Then, add the sliced king oyster mushrooms and stir-fry until they start to brown slightly.

Step 3

Add the blanched broccoli florets and the sliced bell pepper to the pan. Stir-fry everything together for about 1-2 minutes, allowing the vegetables to get coated with the garlic-infused oil.

Step 4

Now, let’s add the seasonings. Pour in 1 tablespoon of soy sauce, 1 tablespoon of tonkatsu sauce, and 1 tablespoon of corn syrup. Sprinkle in a pinch of herb salt and black pepper. Stir-fry quickly over medium heat until the sauce thickens and coats the vegetables, about 1-2 minutes. Taste and adjust seasoning if needed, adding a little more soy sauce for saltiness or corn syrup for sweetness. Serve hot and enjoy!
