Bulgogi Udon Salad

I was trying to eat salad for my diet, but who here is the kind of person who thought, ‘Meat is protein, so it’s okay!’ and loaded it up? (Raises hand – it’s me.) Main Ingredients

  • 200g Beef for Bulgogi
  • 1 portion Udon Noodles
  • 2 handfuls Lettuce

Beef Marinade

  • 2 Tbsp Soy Sauce (for soup)
  • 1 Tbsp Sugar
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • Pinch of Black Pepper

Dressing Ingredients

  • 3 Tbsp Soy Sauce
  • 2 Tbsp Lemon Juice
  • 2 Tbsp Sugar
  • 2 Tbsp Whole Grain Mustard

Cooking Instructions

Step 1

In a bowl, place the beef for bulgogi. Add all the ‘Beef Marinade’ ingredients (2 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp minced garlic, 1 Tbsp sesame oil, pinch of black pepper) and mix well by hand. Let it marinate for about 10 minutes for the flavors to meld beautifully.

Heat a pan over medium-high heat. Add the marinated beef and stir-fry until cooked through. Once the beef is done, turn off the heat and let it cool slightly in the pan. If it’s too hot, the vegetables might wilt too much.

Bring a pot of water to a boil. Add the udon noodles and blanch for just 1-2 minutes. The key is not to overcook them; you want them slightly firm! Immediately rinse the blanched udon noodles under cold water to make them springy and drain well.

To the drained udon noodles, add all the ‘Dressing Ingredients’ (3 Tbsp soy sauce, 2 Tbsp lemon juice, 2 Tbsp sugar, 2 Tbsp whole grain mustard). Gently toss to coat the noodles evenly with the dressing.

Once the udon noodles are well mixed with the dressing, add the cooked bulgogi (that has cooled slightly) and gently combine. Be careful not to break the noodles or the meat while mixing.
