Cooking Instructions

Step 1

Prepare the fresh beef tenderloin. If you’re using a whole cut, first slice it thinly. This will make it easier to mince.

Step 1

Step 2

Using the back of your knife, gently chop the thinly sliced beef into very small pieces. This technique creates a patty that is incredibly tender and bursting with juicy flavor, delivering that signature ‘juicy explosion’ texture.

Step 2

Step 3

The key to a Shake Shack burger is its abundant juiciness! For this reason, choosing a cut of beef with good marbling will result in an even more delicious patty.

Step 3

Step 4

Season the minced beef with salt and pepper. This enhances the natural flavor of the meat.

Step 4

Step 5

To ensure the patty holds together well while cooking and doesn’t fall apart, add cornstarch sparingly. Use just enough to provide binding – adding too much can make the patty gummy.

Step 5

Step 6

Gently mix the seasoned meat with your hands until it forms a cohesive ball. Avoid overworking the meat; mix it gently.

Step 6

Step 7

Divide the combined meat into roughly three portions and shape them into round, flat patties. Allow these patties to rest at room temperature for 30 minutes to further tenderize the meat.

Step 7

Step 8

Add a generous amount of butter to your pan. The butter will impart a wonderful flavor to the buns.

Step 8

Step 9

Place the potato buns in the pan and toast them until golden brown on both sides. This will result in buns that are crispy on the outside and soft on the inside.

Step 9

Step 10

Cook the bacon in the same pan until it’s nicely crispy. It adds a wonderful texture and flavor.

Step 10

Step 11

Here’s a special trick to add that signature smoky flavor! Sprinkle about half a tablespoon of sugar in the pan. Wait for the sugar to melt and turn a light brown color.

Step 11

Step 12

As soon as the sugar turns brown and begins to caramelize slightly (but before it burns!), immediately place the rested beef patties into the pan. Be careful not to let the sugar burn.

Step 12

Step 13

Once the patties are in the pan, gently press them down with a spatula. This helps them cook evenly and spread out for better juiciness distribution.

Step 13

Step 14

When you start to see juices bubbling up to the surface of the patties, flip them over – only once! Immediately place a slice of cheese on top of each patty and let it melt until gooey.

Step 14

Step 15

On the bottom half of your toasted potato bun, layer the fresh lettuce leaves. The lettuce acts as a barrier, preventing the bun from becoming soggy from the patty’s juices.

Step 15

Step 16

Carefully place the juicy, cheese-topped patty on top of the lettuce.

Step 16

Step 17

Layer the crispy cooked bacon over the patty for an extra delicious crunch.

Step 17

Step 18

Drizzle mayonnaise over the bacon, according to your preference. This adds a creamy richness.

Step 18

Step 19

Arrange the tangy pickles attractively on top. The pickles are crucial for cutting through the richness of the burger.

Step 19

Step 20

Finally, place the top half of the potato bun to complete your Shake Shack-style burger! Gently press down on the assembled burger to help everything settle. Enjoy your delicious creation!
