When you’re dining alone or have a late dinner after a long day, fried rice is a perfect quick meal! Kimchi fried rice, made with the staple ingredient of kimchi readily available at home, is a universally loved dish. Main Ingredients
- 200g well-fermented kimchi (including juice)
- 1/2 stalk green onion
- 1 Tbsp minced garlic
- 0.5 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp soy sauce
- 1 Tbsp sesame seeds
- 1.5 bowls cooked rice
- 1 egg
- 25g butter (approx. 1.5 Tbsp)
Cooking Instructions
Step 1
First, thinly slice half a stalk of green onion crosswise. You can use both the white and green parts for a fragrant aroma when stir-frying.
Step 2
Finely chop 200g of kimchi. Including some kimchi juice will add moisture and deepen the savory flavor of the fried rice. If your kimchi is too sour, you can add a pinch of sugar.
Step 3
Melt 25g of butter in a pan over medium heat. Once melted, add the sliced green onion and 1 Tbsp of minced garlic. Sauté for about 1-2 minutes until fragrant, ensuring it doesn’t burn.
Step 4
When the aroma of green onion and garlic is released, add the finely chopped kimchi. Stir and cook for about 5 minutes, making sure it doesn’t stick to the pan. Stirring prevents any raw smell from the kimchi and brings out its natural sweetness.

Once the kimchi is well-cooked, add 0.5 Tbsp of red pepper flakes and stir-fry quickly with the kimchi for about 30 seconds. This helps to reduce any bitterness from the flakes and enhances the color.
