Ingredients

  • 5-6 small potatoes (baby potatoes are great)
  • 1 cup water (200ml)
  • 40g unsalted butter
  • 1 tsp salt
  • 2 Tbsp sugar

First, wash the potatoes thoroughly and peel them. To maintain a good texture, avoid cutting them too small. Halve the potatoes for a nice, bite-sized piece. (Tip: If your potatoes are quite large, you can cut them into quarters.)

Now, heat a dry pan over high heat. Add the cut potatoes, placing the cut side down. Pour in 1 cup of water and bring to a boil. Once boiling, reduce the heat to medium, add 1 tsp of salt for flavor, and cover the pan. Let them cook for about 10-15 minutes. (Tip: Keep an eye on the potatoes to prevent them from burning.)

When most of the water has evaporated, add 40g of butter. Lower the heat to medium-low. Gently toss the potatoes to coat them evenly with the melting butter, and continue to cook for about 10 minutes. This step will help them get a beautiful golden-brown color and develop a rich flavor.
