Main Ingredients

  • Stone crop (Dolnamul) 2 cups (washed)
  • Apple 1/2 (julienned)

Seasoning

  • Red pepper flakes 2 Tbsp
  • Soup soy sauce (or brewed soy sauce) 1 Tbsp (use 2 Tbsp if you prefer sweeter)
  • Plum extract 2 Tbsp
  • Vinegar 2 Tbsp
  • Minced garlic 1 tsp
  • Salt 1/2 tsp
  • Sesame oil a little
  • Crushed sesame seeds 1/2 Tbsp

Cooking Instructions

Step 1

Gently rinse the stone crop under running water by swishing it around. Avoid washing too vigorously, as this can impart a raw flavor. Drain the washed stone crop thoroughly in a colander. Julienne the apple; you can leave the peel on or peel it first, as you prefer.

In a bowl, combine all the seasoning ingredients: red pepper flakes, soup soy sauce (or brewed soy sauce), plum extract, vinegar, minced garlic, and salt. Mix well to create the dressing. Taste the dressing and adjust the seasonings (soy sauce, vinegar, plum extract, sugar, etc.) according to your preference.

Add the drained stone crop and julienned apple to the bowl with the dressing. Gently toss everything together with your hands to coat. Be careful not to mash the ingredients; a light toss will keep the stone crop crisp and the apple fresh.
