Ingredients

  • Napa cabbage kimchi (aged), 1/4 head
  • Canned mackerel, 1 can
  • Green onion, 1 stalk

Seasoning

  • Soy sauce, 2 Tbsp
  • Oligosaccharide (or corn syrup), 2 Tbsp
  • Minced garlic, 1 tsp
  • Ground black pepper, a pinch

Cooking Instructions

Step 1

Prepare 1/4 head of aged Napa cabbage kimchi. Cut it into manageable pieces, including the inner core and any radish from the kimchi, and place it at the bottom of a pot. This adds great flavor.

Carefully open the can of mackerel. The oil-rich liquid in the can can alter the flavor, so drain about half of it to preserve the delicious, natural taste of the mackerel.

Gently place the drained canned mackerel, along with its remaining liquid, on top of the kimchi. Add 1 cup of water or anchovy-kelp broth to ensure the ingredients are well covered and moist. Bring this to a rolling boil over high heat.

While the kimchi and mackerel are coming to a boil, mix together 2 Tbsp soy sauce, 2 Tbsp oligosaccharide, 1 tsp minced garlic, and a pinch of black pepper in a small bowl to create the seasoning sauce.

Once the stew starts boiling, evenly drizzle the prepared seasoning sauce over the mackerel and kimchi. Continue to boil uncovered over high heat, allowing the sauce to meld with the ingredients.

While it’s simmering, spoon some of the broth over the mackerel occasionally. This helps the mackerel absorb more flavor and keeps it moist. Reduce the heat to medium and let it simmer until the liquid has reduced to a thick consistency.

When the mackerel and kimchi are almost stewed down, thinly slice the green onion diagonally and scatter it over the top of the pot. This adds a fresh, aromatic element.
