Ingredients

  • 1 New Onion (medium-sized)

Seasoning

  • 1 Tbsp Cooking Oil
  • 1 Tbsp Sesame Oil
  • 5 Tbsp Soy Sauce (adjust according to onion size and taste)

First, prepare your fresh new onion. Peel and wash it thoroughly, then slice it thinly into strands about 0.5 cm thick. Slicing it thinly will help it absorb the seasoning better and give it a pleasant texture.

Heat a frying pan over medium heat. Add 1 tablespoon of cooking oil and 1 tablespoon of sesame oil. It’s best to add sesame oil later in the cooking process to prevent burning, so combining it with cooking oil at the start is a good tip.

Add the sliced onions to the pan and stir-fry. Cook over medium heat until the onions begin to turn translucent. For an extra delicious touch, you can also stir-fry thinly sliced potatoes along with the onions! (Personally, I found it tasted even better when the onion quantity was slightly higher than the potato.)

Now it’s time for the soy sauce seasoning. I used 5 tablespoons of soy sauce for one medium-sized new onion, but the amount can vary depending on the size and sweetness of your onion. Instead of adding all the soy sauce at once, it’s best to taste as you go and adjust the seasoning towards the end.

After adding the soy sauce, turn the heat up to high and stir-fry quickly. The slight ‘burnt’ flavor that develops from the sauce slightly caramelizing adds a wonderful depth of flavor. Once the onions are well coated with the sauce, reduce the heat to low, add about 3 tablespoons of water, and cook until the onions are tender and have softened. Then, it’s done!
