I made the Celery Detox Juice introduced on the health program ‘The Body Show’. This juice is great for dieting and makes you feel lighter. Afterwards, I used the leftover celery pulp to create a wonderfully chewy and tasty celery pancake. Let me share this special recipe that captures both health and flavor!
Ingredients for Juice & Pancake- 500g celery
- 1 pack enoki mushrooms
- 3 eggs

Cooking Instructions
Step 1
First, prepare 500g of celery thoroughly. Soak the celery in a mixture of water with a little vinegar and soju for about 10 minutes, then rinse it several times under running plain water. This process helps to remove any strong raw celery flavor and makes it taste cleaner. After draining the water, place the celery in a blender. Use an 8:2 ratio of stalks to leaves. Put the stalks at the bottom and the leaves on top. Gently press down with a spoon while blending until smooth. Combining both stalks and leaves helps to maximize the nutrients and flavor.
Step 2
This celery detox juice is most effective when consumed on an empty stomach in the morning, as it aids in flushing out toxins from the body. Don’t discard the leftover celery pulp after making the juice! Crack 3 eggs into a bowl, add a pinch of salt for seasoning, and then add 1 pack of enoki mushrooms. Clean the mushrooms, remove the root ends, and either tear them apart or slice them before adding them to the mixture.
Step 3
Now, use chopsticks or a whisk to thoroughly mix the celery pulp, enoki mushrooms, and egg mixture. Ensure the enoki mushrooms are well distributed among the celery and egg to add a pleasant chewiness to the pancake.
Step 4
Heat a generous amount of cooking oil in a pan. Spoon portions of the mixed batter onto the hot pan and fry on both sides until golden brown and cooked through. The result is a delicious celery pancake with a crispy exterior and a chewy interior. The subtle celery aroma will whet your appetite. It’s especially delicious when served warm!
