I’ve been really enjoying ‘Three Meals a Day: Fishing Village’ Season 5, and Cha Seung-won’s cooking skills have been so impressive! Especially the side dishes he made for Gong Hyo-jin, like the stir-fried garlic scapes, looked incredibly delicious. A while ago, I tried making Cha Seung-won style stir-fried garlic scapes with dried shrimp, and my husband said it was the best garlic scape stir-fry he’d ever tasted! It’s simple yet has a strangely addictive flavor that makes you keep reaching for more. Let me share this amazing recipe with you right now.
Main Ingredients- 1 handful garlic scapes (approx. 150-200g)
- 1.5 cups dried shrimp (approx. 50g)
- 1 Tbsp cooking oil
Seasoning- 1 pinch salt
- 1.5 Tbsp soy sauce
- 2 Tbsp oligosaccharide (or corn syrup)
- 1 Tbsp toasted sesame seeds

Cooking Instructions
Step 1
Prepare 1.5 cups of dried shrimp. Wash the garlic scapes thoroughly. (You can also use any leftover garlic scapes from making pickled garlic scapes.)
Step 2
Cut the garlic scapes into bite-sized pieces, about 5cm long.
Step 3
Bring a pot of water to a boil, then add the chopped garlic scapes and blanch for just 30 seconds to 1 minute. This step removes any bitterness from the garlic scapes and shortens the cooking time, resulting in a crisper, more delicious texture.
Step 4
Immediately rinse the blanched garlic scapes under cold water to cool them down. Then, drain them thoroughly in a colander to remove all excess moisture.
Step 5
Heat 1 Tbsp of cooking oil in a preheated pan over medium-low heat. Add the dried shrimp and the drained garlic scapes, and stir-fry. It’s important to stir-fry the dried shrimp until their savory flavor is enhanced. Add a pinch of salt at this stage to season the dish.
Step 6
Once the ingredients are sautéed, add all the prepared seasoning ingredients and mix well. Add 1.5 Tbsp soy sauce, 2 Tbsp oligosaccharide, and 1 Tbsp toasted sesame seeds. Stir-fry until glossy. Even with simple seasonings, the flavor is guaranteed!
