Ingredients- 4 long crab sticks
- 2 fresh eggs
- A small bunch of chives
- 1/3 green onion
- 1/5 carrot
- Salt to taste
- Cooking oil for frying
Cooking Instructions
Step 1
First, prepare the long crab sticks commonly found in supermarkets. Cut each crab stick lengthwise in half, so you have four pieces, and you will use two pieces for each heart shape.
Step 2
To get clean, neat edges, cut the crab sticks with the knife held straight down, avoiding any angled cuts. A clean cut makes for a prettier final presentation!
Step 3
Gently pinch the two ends of each halved crab stick together to form a charming heart shape. Secure the shape by inserting a skewer or toothpick through the pinched ends.

When shaping the hearts, position the red rim of the crab stick facing forward for an appealing look. You can adjust the width and roundness of the heart by widening or narrowing the gap between the pinched ends.

Crack two fresh eggs into a bowl. It’s important to remove the chalazae (the stringy white bits) to avoid any eggy smell. If you have any leftover bits from cutting the crab sticks, finely chop them and add them to the egg mixture for extra texture and flavor.

Finely chop the chives and green onion. Adding finely chopped vegetables will complement the crab sticks and create a more harmonious flavor profile.

Heat a generous amount of cooking oil in a frying pan over medium-low heat. Once the oil is shimmering, carefully place the heart-shaped crab sticks into the pan.

The top cooks very quickly, so flip the fritters gently and cook for a short time until golden brown on the other side. Carefully remove the skewer by gently twisting it. Serve the heart crab stick fritters on a plate with a side of soy-vinegar dipping sauce or ketchup.
