Ingredients & Preparation- 200ml Eggs (approx. 3-5 eggs, measured by size)
- 350ml Water
- 1 tsp Salted Koji (Nuruk Salt) (or a pinch of regular salt)
- 50g Fresh Rapeseed Flowers (or other edible flowers)
Cooking Instructions
Step 1
First, prepare about 3 to 5 fresh eggs. Since egg sizes vary, it’s key to crack them, measure the liquid to exactly 200ml in a measuring cup, and use that for the perfect smooth steamed egg.
Step 2
Carefully pour the measured beaten eggs through a fine-mesh sieve. Sieving the eggs removes any chalazae (the white stringy bits) and bits of shell, ensuring a silky smooth and refined texture for your steamed egg.
Step 3
When sieving, gently scrape the bottom of the sieve with a spatula or spoon. This technique helps the egg liquid pass through more easily, ensuring no lumps remain and you get a perfectly smooth consistency.
Step 4
Combine the strained egg liquid with 350ml of water in a measuring cup and mix well. For seasoning, we’ve used 1 teaspoon of Salted Koji (Nuruk Salt) for a subtle, savory depth. If you don’t have Salted Koji, you can use regular salt, adjusting the amount to your taste. Be mindful not to oversalt it.
Step 5
Once the egg mixture is well combined, pour it into a microwave-safe dish and cover it with plastic wrap. Pierce a few small holes in the wrap using a toothpick or fork. This allows steam to escape during cooking, preventing the egg from exploding and ensuring it cooks evenly.

While the egg mixture is cooking in the microwave, wash the prepared rapeseed flowers. Rapeseed flowers are edible and safe to consume, adding a beautiful color and delicate fragrance to your dish.
