  • 1/3 paper cup of water (approx. 50ml)
  • 1/3 spoon of salt (approx. 2-3g)
  • 1/3 spoon of sugar (approx. 2-3g)
  • 1/2 slice of cheddar cheese
  • 2 spoons of mozzarella cheese
  • A little cooking oil

First, crack 5 large eggs into a bowl. Add 1/3 paper cup of water, 1/3 spoon of salt, and 1/3 spoon of sugar. Gently whisk the mixture until well combined, being careful not to create too much foam. The sugar helps to balance the eggy flavor and enhance the overall taste.

Prepare a small earthenware pot (ttukbaegi) for steaming. Lightly coat the inside of the pot, including the bottom and sides, with a little cooking oil. This crucial step prevents the steamed eggs from sticking and ensures a silky-smooth texture. It also makes serving much easier.

Carefully pour the prepared egg mixture into the oiled earthenware pot. Fill the pot only up to about 80% of its capacity. This leaves enough room for the eggs to expand as they cook without overflowing.

Now, it’s time to cook over high heat. Using chopsticks or a spatula, gently stir the egg mixture, scraping the sides and bottom of the pot. This constant motion prevents the eggs from curdling and ensures even cooking, resulting in a tender, custard-like consistency. Continue stirring for about 1-2 minutes.
