It’s the season for delicious sweet potatoes! While steamed sweet potatoes are wonderful on their own, I decided to make something special for my husband, who isn’t a huge fan of them. This ‘Cheesy Baked Sweet Potato’ is quick to prepare in the morning. Ingredients (Serves 2)- 3-4 medium sweet potatoes
- 1 handful shredded mozzarella cheese
- 1 handful shredded cheddar cheese (optional)
- Pinch of salt

First, prepare your sweet potatoes. You can use pre-steamed sweet potatoes or, if starting raw, wash them thoroughly, place them in a microwave-safe dish, and microwave for about 8 minutes until tender. They are ready when a fork easily pierces through them.

Carefully cut the prepared sweet potatoes in half lengthwise. Arrange them cut-side up on an oven tray or a baking sheet lined with parchment paper.
