Weekend Treat! Making Kimchi Nabe with Mokwoo-chon Cheese Donkatsu
Weekends are for donkatsu! This dish is a captivating blend of sweet and savory, with gooey, stretchy cheese, spicy kimchi, and a crispy pork cutlet. Enjoy this irresistible combination of flavors and textures.
Ingredients- 1 Mokwoo-chon Crispy Cheese Donkatsu
- 1 stalk green onion
- 1/2 onion
- Kimchi, to taste
- 1 Tbsp sugar
- 1 Tbsp cooking wine (mirin)
- 200ml water
- 1 egg
- Shredded mozzarella cheese, to taste
Cooking Instructions
Step 1
First, thinly slice the green onion. This will be used to create an aromatic green onion oil for the dish.
Step 2
Slice the onion into similar pieces as the green onion and set aside. The sweetness of the onion will deepen the flavor of the kimchi nabe.

Chop the ripe kimchi into bite-sized pieces. Well-fermented kimchi will yield a richer and more delicious broth.

Lightly grease a pot with cooking oil. Add the sliced green onions and onions, then sauté over medium-low heat until fragrant and slightly softened, releasing their natural oils to create an aromatic base.

Once the green onion and onion have released their fragrance, add the chopped kimchi to the pot and stir-fry together. Sautéing the kimchi with the oil helps to develop its flavor further.

After the kimchi has sautéed for a bit, add 1 tablespoon of sugar and 1 tablespoon of cooking wine (mirin) to season. The sugar balances the kimchi’s acidity, while the mirin removes any unwanted odors and adds a touch of umami.

Pour in 200ml of water and stir well to combine. Bring the mixture to a simmer and allow it to cook until the liquid is slightly reduced, which will intensify the flavors.

Cut the pre-cooked Mokwoo-chon Cheese Donkatsu into manageable pieces and arrange them attractively in the pot. Pour the prepared egg mixture evenly over the donkatsu. Reduce the heat to low, cover the pot, and let it simmer gently until the egg is mostly set. This process helps the donkatsu absorb the flavorful broth.

Once the egg is semi-cooked, generously sprinkle shredded mozzarella cheese over and between the pieces of donkatsu. Cover the pot again and cook for about 3 more minutes, or until the cheese is completely melted and gooey. Your delicious Cheesy Donkatsu Kimchi Nabe is ready to be enjoyed hot!
