Cheesy Gochujang Pork Bulgogi
Gochujang Pork Bulgogi baked with melt-in-your-mouth Mozzarella Cheese
Experience a delightful twist on traditional pork bulgogi! This recipe features tender pork marinated in a savory and spicy gochujang sauce, stir-fried to perfection, and then generously topped with mozzarella cheese and baked until golden and gooey. It’s a crowd-pleaser that’s perfect for family dinners or special occasions.
Main Ingredients- 600g Pork shoulder or neck
- 1/4 Carrot
- 1 Onion
- 1/2 Green onion
- 1 handful Mozzarella cheese (about 100g)
- 1 handful Oyster mushrooms (about 50g)
Marinade- 1 Tbsp minced garlic
- 1 Tbsp minced green onion (white parts preferred)
- 3 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes, adjust to taste)
- 2 Tbsp Soy sauce
- 2 Tbsp Oligosaccharide (or corn syrup)
- Pinch of black pepper
- Pinch of ground ginger (or 1/2 tsp minced fresh ginger)
- Drizzle of sesame oil
- 1 Tbsp minced garlic
- 1 Tbsp minced green onion (white parts preferred)
- 3 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili flakes, adjust to taste)
- 2 Tbsp Soy sauce
- 2 Tbsp Oligosaccharide (or corn syrup)
- Pinch of black pepper
- Pinch of ground ginger (or 1/2 tsp minced fresh ginger)
- Drizzle of sesame oil
Cooking Instructions
Step 1
Prepare the vegetables first. Slice the carrot into 0.5cm thick half-moons, and thinly slice the onion. Cut the green onion into large, 5cm pieces. In a bowl, combine the pork, carrot, onion, and green onion. Add all the marinade ingredients (minced garlic, minced green onion, gochujang, gochugaru, soy sauce, oligosaccharide, black pepper, ginger powder, and sesame oil). Mix everything well to coat the pork evenly. Let it marinate for at least 30 minutes for deeper flavor. (Tip: For extra spice, add another 1/2 Tbsp of gochujang while stir-frying.)
Step 2
Gently tear the oyster mushrooms into bite-sized pieces. Adding mushrooms enhances the aroma and texture of the dish.
Step 3
Heat a pan over medium heat. Add the marinated pork and vegetables. Stir-fry until the pork is fully cooked and the sauce has thickened, stirring occasionally to prevent burning. This should take about 7-10 minutes.
Step 4
Once the pork is cooked and the sauce has reduced, transfer the stir-fried gochujang pork bulgogi to an oven-safe dish or skillet. Arrange it attractively.
Step 5
Sprinkle a generous handful of mozzarella cheese evenly over the bulgogi. More cheese makes it even better! (Important: Ensure you are using a dish that is safe for oven use.)
Step 6
Bake in a preheated oven at 180°C (350°F) for about 8-10 minutes, or until the cheese is melted and golden brown. Oven temperatures can vary, so keep an eye on it and adjust the time as needed. You only need to melt the cheese, but baking until slightly browned adds extra flavor. (Tip: If you don’t have an oven, you can cover the pan with a lid and melt the cheese over low heat.)
