Delicious Cheese Kimchi Fried Rice Recipe
Enjoy a rich and flavorful meal by adding melty cheese to this savory and slightly sweet kimchi fried rice, made with plenty of delicious, well-fermented kimchi! It’s simple to make and sure to delight everyone’s taste buds.
Main Ingredients- 1 bowl well-fermented kimchi (approx. 150g), finely chopped
- 1 bunch green onion (approx. 30g), thinly sliced
- 2 eggs
- 2 bowls rice (warm cooked rice)
- 2 slices processed cheese
Seasoning- 1 Tbsp granulated sugar or sugar
- 1 Tbsp soy sauce
- 1 Tbsp gochujang (Korean chili paste)

Cooking Instructions
Step 1
First, wash the green onions and thinly slice them, separating the white and green parts. Finely chop the kimchi into bite-sized pieces. Sprinkle 1 tablespoon of granulated sugar (or regular sugar) over the chopped kimchi and gently mix it in. This helps to mellow the acidity of the kimchi and enhance its savory flavor, making it more delicious when stir-fried.
Step 2
Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the sliced green onions and stir-fry for 1-2 minutes until fragrant, creating an aromatic green onion oil. Once the aroma is released, add 1 tablespoon of soy sauce and 1 tablespoon of gochujang. Stir-fry them together briefly to prevent burning.
Step 3
Once the seasoned mixture in the pan begins to bubble, add the prepared kimchi. Stir-fry for about 3-4 minutes until the kimchi softens and is evenly coated with the seasoning. If your kimchi is too sour, you can add a little more sugar.
Step 4
In a large bowl, combine 2 bowls of warm cooked rice with 2 eggs. Gently break apart the eggs and mix them into the rice with a spatula, ensuring the rice grains are separated. This will help the rice grains cook up fluffy.
Step 5
Add the egg-mixed rice to the stir-fried kimchi mixture. Turn the heat to high and gently stir and mix with a spatula, being careful not to mash the rice grains. Continue stir-frying until each grain of rice is coated with the kimchi seasoning and the rice looks fluffy. Reduce the heat once the rice is fluffy and all ingredients are well combined.
Step 6
Serve the kimchi fried rice in a bowl. While it’s delicious as is, for an extra special treat, top the fried rice with 2 slices of processed cheese. The melting cheese will blend with the rice, creating a wonderfully creamy and flavorful dish. Gently mix the cheese into the rice and enjoy this warm, delicious meal!
