Using both oil and butter prevents the butter from burning too quickly while still imparting its rich flavor. Sauté the kimchi over medium-high heat until it becomes tender and fragrant.

For the best fried rice texture, it’s crucial to use chilled, fluffy cooked rice. Rice that has cooled down, ideally from the refrigerator, has less moisture and will result in distinct, non-sticky grains when stir-fried.
