  • 150g oyster mushrooms (1 pack)
  • 1/4 large onion (approx. 100g)
  • 100g pizza cheese
  • 1 stalk green onion (for garnish)

  • 30ml potato starch (or corn starch) (approx. 3 Tbsp)
  • 1 Tbsp cooking oil (per pancake)

Cooking Instructions

Step 1

Prepare the oyster mushrooms: Trim the tough ends and separate any large clusters into bite-sized pieces. Briefly blanch them in boiling water, then thoroughly squeeze out all excess moisture. Place the mushrooms in a bowl, add 30ml of starch powder, and toss to coat evenly. Coating with starch helps achieve a crispier texture!

Finely slice the 1/4 large onion (about 100g). In the same bowl with the coated mushrooms, add the 100g of pizza cheese and the sliced onion. Mix everything together well. (If you have dried parsley, a small amount at this stage will enhance the flavor.)

Heat a non-stick pan over medium heat and add 1 Tbsp of cooking oil, ensuring it coats the pan evenly. Ladle portions of the mushroom mixture onto the hot pan, spreading them thinly into round shapes. Gently press down with the back of a spoon to form the pancakes.

Once the edges begin to turn golden brown, reduce the heat to medium-low. Gently shake the pan to check if the pancake moves freely without sticking. Carefully lift an edge with a spatula; if the underside is a light golden brown and the cheese has melted to bind the ingredients together, it’s ready to be flipped.

Using a spatula, carefully flip the pancake over. Once flipped, press down again with the spatula or spoon to ensure the cheese doesn’t ooze out and to maintain a neat shape. Cook for another 3 minutes on this side.

Once both sides are nicely golden and cooked through, your cheesy mushroom pancakes are ready! Cut into desired portions and garnish with freshly chopped green onions.
