Main Ingredients
  • 1/3 block Firm Tofu (approx. 100g)
  • 1/3 can Spam (approx. 100g)
  • 2 Eggs

Cooking Instructions

Step 1

First, drain the excess water from the 1/3 block of firm tofu. You can do this by pressing it with paper towels or placing it in a sieve. Once drained, mash the tofu thoroughly with a fork or your hands until it’s crumbly and there are no large lumps. This mashed tofu will act as a binder for the other ingredients.

Step 2

Next, dice the 1/3 can of Spam into small pieces. Then, mash it with your hands or pulse it in a food processor until finely minced. Add the mashed Spam to the bowl with the mashed tofu. The saltiness of the Spam helps season the dish, but you can add a pinch of salt if needed.

Step 3

Crack the 2 fresh eggs into the bowl containing the mashed tofu and Spam. The eggs will help bind everything together, adding a rich and creamy texture.

Step 4

Add 0.5 tablespoon of oyster sauce for a savory depth of flavor. If you don’t have oyster sauce, you can substitute with soy sauce or salt, but the oyster sauce provides a wonderful umami taste.

Using a spatula or spoon, thoroughly mix all the ingredients together until well combined. Ensure the tofu, Spam, eggs, and oyster sauce are evenly distributed with no large clumps. The mixture should hold its shape when pressed.

Lightly grease a non-stick pan with cooking oil over medium-low heat. Spoon portions of the mixture onto the pan and spread them out into thin, circular patties. Aim for a consistent thickness so they cook evenly.

Cook the patties gently over medium-low heat until the bottom side is golden brown and firm. Be patient! Once the bottom is cooked, place a plate larger than the pancake on top, then carefully flip the pan and pancake together. This will allow you to cook the other side evenly. Be careful not to break the pancake during this step.

After both sides are nicely browned, place a slice of cheddar cheese on one half of the cooked pancake. You can tear the cheese into smaller pieces if preferred. The melting cheese will add extra flavor and a gooey texture.
