Basic Ingredients
- 1 Scallion (mostly the white part)
- 1 packet of your favorite ramen (e.g., Ansungtangmyun)
- 1 fresh Egg
Cooking Instructions
Step 1
First, prepare the scallion. Thinly julienne the white part of the scallion. If julienning is difficult, slicing it diagonally about 0.5cm thick is also fine. This will give you a satisfying bite.
Step 2
Soak the julienned scallions in cold water for a moment. This softens the pungent flavor and sharp aroma of the scallions, making the ramen broth cleaner and more refined. Soak for about 2-3 minutes, then drain the water.

Heat a pot with a little canola oil and add the drained scallions. Sauté over low heat until the scallions wilt and release their sweet fragrance. Be careful not to burn them; this slow sautéing is key to developing their flavor.

Now it’s time to add the ramen soup base. If you like spicy food, you can add chili powder here, but today we’ll keep it simple and use only the soup base for a clean taste. (The flavor will vary depending on the ramen brand used. Ansungtangmyun soup base was used as an example.)

Add water according to the amount specified on the ramen package and bring it to a boil. Once the broth is bubbling, add the ramen noodles and the dried vegetable packet, and cook until done.

When the ramen is almost cooked, crack a fresh egg right into the pot! You can cook the egg whole or gently break and stir it, depending on your preference.

Simmer for a little longer until the egg whites are set and the yolk is cooked to your liking (e.g., soft-boiled). Avoid overcooking, as the egg can become tough. Your delicious scallion ramen is almost ready!
