Oxtail Soup Ingredients- Oxtail 1.5kg
Oxtail Marinade- Korean soy sauce (Guk-ganjang) 1 Tbsp
- Regular soy sauce (Jin-ganjang) 1/2 Tbsp
- Sesame oil 1 Tbsp
- Minced garlic 1 Tbsp
- Black pepper, a pinch (to taste)
All-Purpose Boiled Meat Dipping Sauce Ingredients- Green onions 60g (chopped)
- Red chili pepper 1 (minced)
- Green chili pepper 1 (minced)
- Soy sauce 1 cup
- Vinegar 1 Tbsp
- Cooking wine (Mirin) 2 Tbsp
- Pineapple syrup from can 2 Tbsp
- Sesame oil 3 Tbsp
- Black pepper, a pinch (to taste)
- Toasted sesame seeds 3 Tbsp
- Minced ginger 1/2 Tbsp
- Minced garlic 1 Tbsp
- Korean soy sauce (Guk-ganjang) 1 Tbsp
- Regular soy sauce (Jin-ganjang) 1/2 Tbsp

Cooking Instructions
Step 1
Start with 1.5kg of fresh oxtail, purchased and prepared for cooking.
Step 2
Soak the oxtail in cold water for 2 hours and 30 minutes to thoroughly remove any blood. Once the blood is drained, place the oxtail in a pot, cover with water, and blanch for 10 minutes. Discard the cloudy blanching water, rinse the oxtail clean, and it’s ready for the next step. This process ensures a clear and clean broth for your oxtail soup.
Step 3
Add 2.5 liters of clean water to the blanched oxtail and simmer over medium heat for 2 hours. After 2 hours, skim off any excess fat and impurities that rise to the surface. Remove the oxtail from the pot and rinse it again under cold water for thorough cleaning.
Step 4
For the oxtail su육 (boiled meat), trim away any excess fat from the pieces using kitchen scissors. Set the prepared oxtail su육 aside in a separate bowl.
Step 5
Prepare beef bone broth (sogogi yuksu) that has been simmered for over 6 hours until rich. You will be combining the oxtail broth and the beef bone broth in an 8:2 ratio. Feel free to adjust the amount of beef bone broth to your preference for an even richer flavor.
Step 6
Combine the clean oxtail broth and the prepared beef bone broth at an 8:2 ratio. Bring it to a gentle boil to allow the flavors to meld together. This blend creates a harmonious balance of the rich oxtail flavor and the deep essence of the beef bone broth.
Step 7
Season the prepared oxtail su육 by gently massaging it with Korean soy sauce, regular soy sauce, sesame oil, minced garlic, and black pepper. This pre-seasoning enhances the natural flavor of the oxtail.
Step 8
While the oxtail soup is simmering, prepare the all-purpose dipping sauce. Finely chop the green onions and mince the red and green chili peppers (seeds removed). Place them in a bowl.
Step 9
To the bowl with green onions and minced peppers, add 1 cup of soy sauce, 1 Tbsp vinegar, 2 Tbsp cooking wine, and 2 Tbsp pineapple syrup from a can. Then, add 3 Tbsp sesame oil, a pinch of black pepper, 3 Tbsp toasted sesame seeds, 1/2 Tbsp minced ginger, and 1 Tbsp minced garlic. Mix well until thoroughly combined to create your all-purpose dipping sauce. (Ginger powder can also be used instead of fresh ginger).
Step 10
This all-purpose sauce is characterized by its deep, savory flavor without added sugar. It’s perfect for mixing with rice, or for dipping various items like fish cakes or dumplings. You can also customize it further by adding sugar or mustard to create different variations of the sauce.

Ladle the hot, simmering oxtail soup into a bowl. Generously garnish with the chopped green onions. Season with salt to your taste, or serve alongside the prepared all-purpose dipping sauce for an enhanced flavor experience.
