  • Granulated Sugar: 60g (typically double the weight of egg whites)

Cooking Instructions

Step 1

Begin by separating 3 egg whites into a clean mixing bowl. Use a hand mixer to beat the egg whites on low speed until they resemble frothy beer foam. Crucially, do NOT add any sugar at this stage! Adding sugar too early will prevent the whites from whipping into a stable meringue.

Step 2

Once you have a beer-foam consistency, it’s time to add the granulated sugar. We’ll add it in three equal portions. Add the first portion of sugar and increase the mixer speed to medium. Continue mixing until the sugar is incorporated.

Step 3

Continue this process of adding sugar in three installments while mixing. Maintain a medium speed (around level 2-3 on your mixer) and beat the meringue until it becomes stiff, glossy, and holds firm peaks. You’ll know it’s ready when you can turn the bowl upside down without the meringue sliding out.

Step 4

Now, let’s add color and a hint of flavor! Stir in a small amount of strawberry syrup. Next, dip a toothpick into pink food coloring and add just a tiny amount to the meringue. Mix gently until you achieve your desired soft pink cherry blossom shade. The color will lighten slightly when baked, so don’t be afraid to go a little bolder!

Step 5

Check that the meringue is stiff enough to hold its shape. Fit the cherry blossom piping tip into your piping bag and fill it with the meringue.
