Chewy Abalone and Aromatic Shiitake Mushroom Jangjorim (Braised Soy Sauce)

Main Ingredients- 6-7 fresh abalones
- 5-6 shiitake mushrooms
- 1 Cheongyang chili pepper (for a spicy kick)
- 1 red chili pepper (for color)
- 7 cloves whole garlic
- 1 Tbsp honey or corn syrup (oligosaccharide)
- 0.5 Tbsp sesame oil
- A pinch of sesame seeds for garnish
Braising Sauce- 250ml water
- 3 Tbsp soy sauce
- 1 Tbsp rice wine (mirin)
- 1 Tbsp plum extract
- 250ml water
- 3 Tbsp soy sauce
- 1 Tbsp rice wine (mirin)
- 1 Tbsp plum extract
Cooking Instructions
Step 1
Using a sturdy brush, thoroughly scrub the abalones to clean them, paying close attention to the crevices between the shell and the meat, as well as the edges. A thorough wash ensures a clean and pleasant taste.
Step 2
Insert a spoon between the abalone shell and the meat, near the mouth of the abalone, and gently push to detach the meat from the shell. Carefully remove the hard ‘teeth’ at the base of the meat and the dark, bitter innards.
Step 3
Slice the detached abalone meat into large, thick pieces, about 3 equal parts. This size is ideal for tenderness and for absorbing the sauce well. Cutting them too small might reduce the satisfying chewiness.
Step 4
Slice the shiitake mushrooms into similarly large pieces, about 3 parts each. Their unique aromatic flavor will add depth to the jangjorim.
Step 5
Halve the whole garlic cloves. Slice the Cheongyang and red chili peppers diagonally into large pieces, after removing the seeds. The chilies will add both a hint of spice and vibrant color.
Step 6
Pour 250ml of water into a pot or deep pan. Add 3 tablespoons of soy sauce. Generous soy sauce is key for the braising liquid to properly flavor the ingredients.
Step 7
Add the sliced shiitake mushrooms, garlic cloves, and chili peppers to the pot. Bring to a simmer over medium heat for about 4-5 minutes, allowing the flavors to meld. Once simmering, stir in 1 tablespoon of rice wine and 1 tablespoon of plum extract. Reduce the heat to medium-low and continue to simmer for about 2 more minutes, letting the sauce lightly infuse the ingredients.
Step 8
When the braising liquid has reduced to about one-third of its original volume, add the prepared abalone. Continue to simmer over medium heat for approximately 2 minutes. Be careful not to overcook the abalone, as it can become tough.
Step 9
As the sauce thickens and becomes glossy, stir in half a tablespoon of sesame oil and 1 tablespoon of honey or corn syrup. Mix well to combine. Feel free to adjust the sweetness to your preference.
Step 10
Finally, generously sprinkle with sesame seeds. Your invigorating abalone and shiitake mushroom jangjorim is now complete! Enjoy this delicious dish over warm rice.
