To provide a more nourishing meal for my children recovering from COVID-19, I decided to make ‘Abalone and Egg Simmered in Soy Sauce’ for the first time. When you’re suffering from a sore throat and can only eat soft foods, a gentle side dish that’s easy to swallow is essential. That’s why I made this dish. Made with live abalone, the abalone meat is tender with a slight chewiness, pairing perfectly with the eggs. In my opinion, it’s much more delicious than abalone and beef simmered in soy sauce. Ingredients

  • 7 live abalones
  • 7 hard-boiled eggs

Seasoning

  • 200ml water
  • 4 Tbsp soy sauce
  • 2 Tbsp cooking sake or mirin
  • 2 Tbsp sugar
  • A little toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the fresh live abalones. Use a toothbrush or scraper to thoroughly clean any debris between the shell and the meat. Rinse them several times under running water. Carefully remove the hard mouthpart (the ‘beak’) of the abalone with a knife.

Score the abalone meat with a knife. Make criss-cross cuts about 2-3mm apart. This helps the seasoning penetrate better and makes the texture even more tender. If the meat is stuck to the shell, you can use a spoon to gently pry it off.

Pour 200ml of water into a pot and bring it to a boil over high heat. Once the water is boiling, carefully add the hard-boiled eggs, ensuring they don’t crack. Briefly warm the eggs in the boiling water for about 5 minutes to help them absorb the sauce better later on.

In a separate bowl, combine 4 Tbsp soy sauce, 2 Tbsp cooking sake (or mirin), and 2 Tbsp sugar. Stir well until the sugar is dissolved to create the delicious soy sauce base for the simmer.

Remove the warmed eggs from the water. Pour the prepared soy sauce mixture into the pot. Once the sauce begins to simmer, carefully add the scored abalones. The abalones will simmer in the sauce, developing a wonderful flavor.

Add the hard-boiled eggs back into the pot with the abalones and simmering sauce. Reduce the heat to medium-low, cover the pot, and let it simmer gently for about 15-20 minutes. Flip the eggs and abalones occasionally to ensure the sauce coats them evenly.

Once the abalones are tender and the sauce has reduced to a nice consistency, turn off the heat. Your delicious abalone and egg simmer is ready! You can serve it immediately while warm, but it also looks more appealing when served in a dish after cooling slightly.
