Main Ingredients- 1/2 block Acorn Jelly (Dotorimuk)
- 1 bunch Chives
- 1/4 Red Bell Pepper
- 1/4 Carrot
- 1/4 Cucumber
- 1/4 Onion
- 100g Chicken Breast
Dipping Sauce- 2 tsp Soy Sauce
- 1 tsp Sesame Oil
- 1 tsp Toasted Sesame Seeds
- 1/2 tsp Gochugaru (Korean Red Pepper Flakes)

Cooking Instructions
Step 1
First, prepare the acorn jelly. Bring a pot of water to a boil, add the acorn jelly, and blanch it for about 5 minutes. This process makes the jelly softer and less likely to break. Once blanched, remove the acorn jelly, let it cool slightly, and then slice it into 4-5 cm wide strips.
Step 2
Prepare the chives, which will be used to tie the rolls. Use as many chives as you plan to make rolls. Blanch them in boiling water for just about 30 seconds. Be careful not to overcook them, as they can become mushy. After blanching, rinse the chives in cold water to stop the cooking and pat them dry.
Step 3
Boil the chicken breast in water for about 5 to 10 minutes until cooked through. Once cooked, let it cool slightly, then shred it by hand along the grain. This ensures a tender texture.
Step 4
Now, let’s prepare the vegetables for the filling. Wash and julienne the carrot, bell pepper, cucumber, and onion. If you’re using chives as part of the filling, julienne those as well. Try to cut all the vegetables into similar widths for a neat appearance when rolled.

It’s time to assemble the acorn jelly rolls! Lay several blanched chives side-by-side on a cutting board or plate. Place a strip of acorn jelly on top of the chives. Then, arrange your prepared vegetables and shredded chicken breast evenly over the acorn jelly. Avoid overfilling, as it might make rolling difficult.
Step 6
Carefully roll the acorn jelly and its filling tightly. Once rolled, use the blanched chives to secure the roll. If you don’t have enough chives, you can use thinly sliced strips of bell pepper as ties. This forms the basic shape of your delicious acorn jelly roll.

Finally, let’s make the dipping sauce. In a small bowl, combine 2 tsp soy sauce, 1 tsp sesame oil, 1 tsp toasted sesame seeds, and 1/2 tsp gochugaru. Mix well.
